Demon Flip -> Light Punch during the flip to safe fall, enables Gouken to absorb 1 hit that isn't a grab/armour breaking move.

Bits and pieces of it absolutely are. For example, Nekojita's Abel use a lot of armour cancelling. You'll see iPeru use armour cancel in to ultra 2 fairly often as well. Also, another interesting armour cancel no longer in the game (as far as I know, at least) is that Gen used to be able to cancel a focus in to a stance change, similar to the focus cancel in to taunt in the video, but with instant recovery!

Because you can only block one attack, and it's kinda obvious. It's hard to follow up with unless the opponent did something which allows Gouken to recover faster when he hits the ground.

That's called kara taunt. You can simply cancel the saving attack by inputting taunt right after the blocking frame. For the details, you can search the kara taunt tutorial on youtube.

Sounded like you just wanted Desk to play around with Oni. Though like I said, in the case of FADC vids, Desk generally picks characters with something to show. Whether it's quick dashes that lend themselves well to FADCs, or moves with armor properties. I'm not saying he won't do Oni, but I don't see a reason to do it over any old shoto.

I'm not a SF expert, but there's a theory that's been going through my mind ever since I watched this video. As an example: when you throw a fireball and your opponent punishes you by using an Ultra, and that Ultra would be a physical one, is it possible to FAC and focus the first attack, then block the rest of the Ultra? If this would work, I would love to see you doing this Desk :) (if there isn't already such a video out there)

It is for style, not practical in match as it waste too much meter, people would rather dodge / block normally than using a few meter to "armor cancels".
