皮蛋瘦肉粥的瘦肉应先用稍多点盐醃制一天，煲粥时米要先泡二小時，水开后，放米，皮蛋先下一半，放点鮮腐竹（剁碎），粥差不多可以了將醃好的瘦肉及皮蛋倒入，粥再滾起洒上蔥花即可，（由于豬肉醃过，有点咸味，先試味，不夠鹽味再加）
