Māori food by Auckland's Most Outstanding Chef | THE place to eat Māori cuisine in New Zealand

Kia Kanuta is the Head Chef at Ada in Tāmaki Makaurau Auckland. He recently won a Lewisham Award for most Outstanding Chef in Auckalnd 2024. We visit Ada to speak to Kia about his award and his food which speaks to his Māori heritage. He's championing the use of Māori ingredients and cooking techniques and helping to tell the Aotearoa New Zealand food story with his cooking. Lunch set menu $55 per head at Ada, at The Convent Hotel, 454 Great North Road, Grey Lynn, Auckland 1021, New Zealand.
Open for breakfast Friday-Saturday 8am-11am and Sunday 8am-10:30am, lunch Thursday and Friday 12pm-3pm, dinner Tuesday to Saturday 5pm-late and Saturday and Sunday long lunch 11am-5pm.

There is no such thing as genuine Maori food, apart from the Hangi which is only another method of cooking without a modern oven or kithen. Another maori food is considered rewena bread which also is just another version of bread baking ie. pumpkin bread.. What on earth is this guy any different from any chef or cook with a passion for food and there are many out there apart from being a Maori person doing the cooking of course, all power to him for being outside the square & calling his cooking Maori technique...

Kia’s menu at Ada is an interpretation of the food he ate growing up incorporating traditional ingredients like pikopiko and harakeke. There aren’t many people out there doing what he’s doing and we are honoured to share his mahi on Chasing a Plate. Cheers, Sheena

95% of that menu is colonial or european introduced food products. Not Maori or indigenous - pumpkin, brussel sprouts, cauliflower, cheese, beef, tomato, cucumber bananas, chocolate, .......
