You can store at room temp for 7-10 days, if in fridge, it is no problem to store for 15-20 days. But I am sure you may polish it off in 3 days because it is so yummy, haha.

I'm doing this recipe a second time right now but both times 18mins has not been even close to the time needed, I'm on 25 mins and the pork still looking very pink....

You have to adjust your oven temperature a bit higher, as each oven is different and the oven temperature varies. To get the accurate temperature, buy an oven thermometer.

I have done it with a thermometer and the meat looks very dry... Doesnt taste anywhere near what I imagined

May I know which mode you used ? Do you have Roast mode? or try not use fan-forced mode, as the fan will dry out the moisture as well.

@@LisasKitchen its an older oven so no mode at all. I tried a lower heat but then it took too long. Tried a higher heat and dried out very much.
