Because of heat. All materials expands or contracts a little according to temperature. It's very noticable on an exhaust system since the exhaust system eventually gets very very hot while the engine is running. An exhaust system is also relatively speaking long, and by the end at the exhaust tips you will see the total result of extension of the whole exhaust system. I also think the high heat capacity of the material used in exhaust systems makes the extension by heat more noticable.

Yes they do... Have a look at your own exhaust before and after driving and you will notice they expand aswell. All exhaust systems does. ;D
