I was curious. What is the bias against nutmeg? I always thought it added an extra element to béchamel that was truly tasty.

I think this channel is the one thing I look forward to most. Funny, quirky, real, songs, poems, music, food, technique, pretty dishes, conversation with us and the crew, and a cute dog. Oh yes! My fav Mac and cheese topping - broccoli tops! I shave the little beads off of the broccoli then dry them and fry them in plugra before sprinkling them over - DEE VINE👌🏼 but I’m a brassica girl. Love me some greenery!

The last few times I made mac and cheese, I used sodium citrate, which can make any cheese melty; it’s magical. It allows you to skip the bechamel, which in my opinion can sometimes make a cheese sauce grainy.
