The saddest to me statement in this video? "You know what? I'm not going to have to cook for a very long time." I understand what you mean, but we enjoy these videos so much I almost want to see you filling many freezers because I want more and more videos. Really selfish, huh? Hugs (virtually, of course) to you. This is the way I like to cook. For years I have collected vintage Corning Ware casseroles at garage sales and thrift stores, invested in flat plastic tops, and love stacking them in my freezer. They are super practical, always reusable. That way they are not just pretty decorations on the shelves (though there are usually still plenty there too). THANK you for this video.

Another way I save and make freezer meals is I make homemade TV dinner type meals. Anytime I have one or 2 servings left of something I add it to a plate and start a homemade TV dinner. I use 2 9inch styrofoam plates for stability and slide them into a gallon size freezer zip bag. That way I can start a dinner and keep adding to it until I have a full dinner plate. I put a meat, starch and 1 or 2 vegetables or a meat and 3 vegetables on each plate. If I have leftover bread like cornbread or rolls I put it in a sandwich size bag and then stick it in with the meal so it does not get soggy. Right now I have 2 plates started with meatloaf, and 1 plate of Salisbury steak. One meatloaf has mashed potatoes on it and a roll. It is waiting on a vegetable. One meatloaf has mac and cheese on it. Also waiting for a vegetable. The salisbury steak is alone so far. I have 7 full dinner plates made up frozen already. These homemade TV dinners have completely eliminated all my food waste. I save cottage cheese and sour cream containers for soups, stews and chilis. The plates stack easily in the bags in the freezer and when time to reheat the food we just slide it to regular dinnerware and microwave it. These tv dinners we use when life gets busy and I cannot cook or am having a bad day as a chronic pain patient and I just do not feel like cooking. This keeps us from getting drive thru take out or ordering pizza. We still do those things. We just do them now when we can enjoy them and not out of necessity. These tv dinners also allow us to help our elderly neighbor. Mr B can no longer cook every day for himself. Some days he feels up to cooking but others he just cannot. I take him 6 to 8 dinners every 10 to 12 days. I usually have a couple containers of soup or dried beans cooked too. The only thing extra I ever cook for him is occasionally he will say I really want XYZ. If I pay for it can you make me several dinners of the same thing. He might do that every couple of months. I also when I find boxed cake mixes on sale will buy them. I use a 9 inch foil pan and bake 2 layers. One I freeze for next time and the other I take him. He gets 8 or 9 pieces of cake from one pan. So it lasts him a while. He saves the sour cream and cottage cheese containers and we wash and reuse them as they are the perfect size for soup. Previously I often threw away my single serving stuff as it would get put in the refrigerator and I would forget about it. This allows me to help him without it costing me a fortune so it helps my heart too.

Soon as I get enough freezer space I want to make freezer meals. Few months ago bruce bought two different times a half a beef so now our freezers one up right one chest freezer are plum full as there are just 2 of us. One time when we went to Bruce’s stepmoms we made her some freezer meals. She loved them because she kept raving on them. Saying how good they were. The next year when we went back she did not want freezer meals for nothing. I don’t know what the deal was. But when I get enough space if Bruce doesn’t fill it up I want to make some freezer meals.TFS.

Looks yummy. I cook like you do. Recipes are inspiration, but not law! I think I will make a similar supper tonight but will use the hamburger I have thawed, a different veg, and different cheese. Also, thanks for the reminder about mustard powder. It is definitely one of those “secret ingredients” that takes a dish to the next level. I always have it in my spice cupboard but forget how wonderful it can be!

@@OurHalfAcreHomestead Yes, they do, but more expensive than a regular one. I just moved to a new house that has wood floors and a crawl space, so I don't want a lot of water on the floor. My 10 cf freezer dumps a LOT of water, so I'll have to put it in my laundry room (it's on a slab) if I'm going to use it, and I also have to have an outlet installed for power. If I've got to spend that much money, I'd rather just go for a frost free and sell the old freezer.

If you invest in glass baking dishes with lids, you will save in the long run. I got a bunch of packs of two(small and large) with lids for $11.99 years ago. Or even the dollar store has great finds. Happy freezer cooking!

I love this Bev! Mac and cheese is my favorite meal:)and adding veggies is so nice! I made a similar recipe to the one you made on this video, homemade white sauce, cheese, and veggies, except I used an organic gluten-free pasta made out of brown rice. This kind of pasta is delicious and does not come out mushy at all! Nice job Bev 🙌

Those black forest hams are very versatile, I buy them on sale also and put them in the deep freezer. Usually I can get 3 different meals for 2. But never thought of doing bulk mac n cheese. Oh I hate using a whisk, I switched back to old style wooden spoon and stir like a madwoman. LOL

l thank you for these idea's exspecially in these trying times with COVID,, and some of us haven't been back to work as of yet,, but ya one of these dinners would do the 3 of us, 2 nights, with a salad or extra veggie on the side.. thanks, l like to make chili and spaghetti sauce in big batches so we have a at least 3-4 meals extra that go in the freezer,, yum home made meals, nothing beats them

I heard Paula Deen say she always fully cooks (or overcooks maybe? I forget) her pasta for macaroni and cheese because it doesn’t absorb water in the oven so the Mac and cheese doesn’t get dry. I never tried it but it would be an interesting experiment!

I make enough food when cooking for me and my hubby to make single freezer meals for him to take out on the road as well as leftovers for myself. I tend to cook like I am cooking for an entire family and not just 2 people. I really need to tone it down food wise, but making him freezer meals to take on the road saves money. He still goes and buys those nasty freezer meals though. I can see once in a while getting them but he wants them all the time. Yuck
