Mom used to make it with sour cream and a dash of mustard no cheese or carrots instead peas and corn with onion celery and jalapeño juice but also chopped Jalapeños. So delicious will add carrots next time!!

She’s a great 👩🏻‍🍳 cook ! I’ve noticed she removes excessive fat & minimal salt/oil. Except for cheese we love cheese! 🤤 balance is key. Perfect example of moderate eating especially authentic Mexican food.

American macaroni salad reduce the mayonnaise and add mazetti original coleslaw dressing to it and cheese. Best mac salad I have ever eaten.

So my grandma who was born in 22, fell in love with a cafeteria macaroni salad. I have never had anything like it. It sounds strange but is SO good. It has cheese, green olives, onions, tomatoes, mayo... and when it combines, it’s like magic happens. It’s very different. She had to reverse engineer the recipe.
