I can guess why you said "used to" instead of "who works". I also worked in the food industry - but I stopped working right after I got my chef's graduation papers. Being a chef is either a passion or a dead-end job. If you couldn't get yourself to get invested into the profession then you'll hate your job, you'll never want to cook outside your restaurant and you'll be burned out frequently. The pay isn't worth the stress - it's easier to just find a white collar job and get close to 50% higher pay and 8 hour work days 5 days a week, instead of 8-13 hour workdays (depending on how stingy the restaurant is with hiring cooks) with a potential of being called for the 6th day in a row (because X person is sick). Chefs frequently have 60-70 hour work weeks where I'm from, and they still get pretty trash pay in comparison to white collar positions (only reason why they're able to survive is because of the sheer work hours they put in). I still have friends who work as chefs from when I was a student, they mostly don't have a goal in life, so they simply work at a chill location where the menu is simple and spend most of their off-time gaming (unmarried).. The other people I know stopped working as chefs and found a white collar position like me (I have multiple people I know in my current work place who used to be chefs or went through a vocational school for it, but reconsidered their decision). That dude in the video likely works in an upscale location with far above average work conditions, but the reason why he was chosen is likely because he loves cooking (I assume, as if he only cooks because his wife cannot cook, then that's a different issue).

Indian style cuisine is inherently cheap to cook, especially when you’re a skilled chef who probably knows how to limit cost when shopping smart. While some people say it's Indian Kichdi, to me it seems like a mix of three Indian dishes, one of which is Kichdi. Whenever you cook lentils with rice, it's Kichdi. The second dish is Dhansak, a Parsi dish traditionally made with mutton, and similar vegetables (pumpkin, aubergine etc) but he used pork also, which is new. Lastly, it reminds me of Dal Gosht, which is basically lentils cooked in mutton in stock.

the truth is that most good chefs don't have much of a work life balance because of the hours (both length of shifts and the fact that many work dinner service, so, late). the fact that this guy has a steady gf and eats something besides pasta with jar sauce/bologna sandwiches in his off time means his work/life balance is better than most chefs!
