Hi Michael...I am from Mexico. I live in a small town. Here there are many poor people that don't have blenders or any baking machine. But they use logs to cook thier meals. And they use something called "comales" made of clay...under this comales they have lot of fire in the way that at the end of the day...is so hot inside, that I realized that it might works like an oven. I have a good friend (she is really poor)..and we bake magdalenas. You know why...because your recipes are so amazing. Even for people that don't have any special machine...thank you so much. My observation. I have seen couple of Videos of Madeline where they beat egg, sugar together white separately and fold the flour gently so no air is deflated. butter is added to part of the batter & mixed. Later added to the remaining batter. Kept in fridge for couple of hrs. Pan is also greased & floured kept in the fridge. Later it's baked as usual. I find it cumbersome. wherein your recipe is simple. post baking is there a difference in texture due to different technique used.since you didn't cut the Madeline to know how the texture of the cake is inside. Thanks.

Thank you for the comparison of the mold with and without flour. I saw bubbles when I coated the pan with flour but tasted delicious. I will definitely use butter on the pan without flour. It is more presentable. Thanks again 😃

Mickael,for the bump on the madeleine,you have to do the dough one day before and to put it on the fridge over night. It's the only way to do it (i'm french).

Any way, by using the kuih bahulu mould the baking time is short. It took me about 7-8 mins. I love this recipe. It is so easy to make and quick to

Home made products are usually free from preservative. So don't expect to store them from a long period of time. Nevertheless, try to keep this madeleines in an air tight container or bag. Store it in a place (in a cabinet) where the room temperature doesn't exit 18°C.
