Good looking smoke ring! I too like to throw the meat in before the pit reaches temp in order to mitigate opening up the lid again to insert meat just for the coals to breath and create a spike in temp. Great job!

I’m on the hunt for some good plate ribs, it’s been awhile! Last ones I got weren’t as meaty as Id hoped. These look awesome. Side note - I still have yet to try killer hogs either lol I’m probably the only one.

Meaty Mike thank you! These ribs are super easy to come by in my area! And for sure give the Killer hogs stuff a try! It’s all good but the TX brisket rub is coarse so it’s real good! 🍻
