Nice cook CJ, most times I prefer a select brisket as it eats easier for me. A prime brisket with the additional fat tends to sit heavy in the gut😊

Looks amazing! I've been curious about hot and fast briskets for a while, but I'm hesitant to try it on that kettle, man. I think I'd be too close to the heat or something. Great cook as usual!

Both knives were inexpwnsive slicing knives Charlie. The one I use for Trimming was a trophy from a cook off. It's a 10 inch Messermeister. The one I sliced with is a 12 inch Dexter soft grip slicer.

On direct heat i do fat down the entire cook at 275 300, and no wrap, minimal trim, you need that fat so it wont crisp up. That one is abit over done the flat will be crumbly. I take it off at 202 if it feels right

I like the domed lid as opposed to the flat drum lid. Better air circulation in my opinion and more room from the top shelf.

So what temp was the drum running while doing this direct method.?.?

It ran right around 300 for the majority of the time Ram. At one point I came to check and it had spiked to 400. I don't know how long it had been there but I was checking about every hour.
