I have a Davy Crockett as well. It's December in California now, so it isn't too too cold, but it dips down into the 30's or so here. My little Davy Crockett pumps the pellets in like mad, even at 200-225. I want to try a brisket on the Davy Crockett, but I am certain a hopper full won't go any longer than 4-5 hours tops. How may times did you have to load the hopper with pellets? GREAT video sir! Thank you for creating and posting. Big thumbs UP and I'm now subscribed!

Hey Mark thank you! And I don’t think I filled the hopper back up more than once. The DC I had was pretty dang efficient. If I remember right I could go about 12 hours at 225 with 1 hopper full of pellets.

Fonzo Castro temp swings. I ended up selling it to my buddy. We got him a new drip pan and it fixed the issue.

@@MadHorseBBQ i totally agree with you on the customer service. Great team. I have both crockett and bowie. Crockett has temp swings as well. I was going crazy trying to control it. A new drip pan? You gave me hope. Can you kindly expand my friend?

Skol Brother. I bought a Traeger a couple three years ago. Love it, but I have to babysit the pellets as they won't keep feeding much longer than an hour or so. Kindof a pain for a long low and slow like a brisket. Does this thing need that much attention. Sir Marrdro VWO. SKOL.

@Jay, I have a Daniel Boone GMG grill and absolutely love it. GMG is a good brand. The Davey Crocket is like the small size, Daniel Boone is medium, and there is one that is fking huge..lol

Very nice and simple recipe for brisket. I will try this for tomorrow Thanksgiving Dinner. From the video I have gathered the following: * Prime brisket flat trimmed * Olive oil rubbed on brisket for a binder * Mix 1 cup pepper and 1 1/4 salt for rub * Add a generous amount of rub on all side of brisket * Round one in the smoker: 225 about 8 hours fat side down. internal temp should be about 170. * Pull brisket, triple wrap with 3x long aluminum foil. Create a basin with foil and add 1 bottle of beer. The underside of brisket should be in contact with the beer. * Round two of smoking, 225 for about 5 more hours. Temp should reach 200 to 203. * Put the brisket in a preheated cooler. He held it for 6 hours before slicing into Could you please confirm? also, does brisket need to be held in cooler for 6 hours or was that because that the time when you were going to eat it?

Bryan Hieda this was a full packer brisket. I didn’t pull off of temp I pulled when the whole thing was prove tender. Usually 203-207.

Just got my DC. So excited to finally try out these large cuts of meat. I did a pork butt on my char broil kettleman for about 10 hours, it came out fine but had to keep up with the coals and what not. Ready for a true smoking experience lol. Thanks for the vid!

Mattia Buffolo there wasn’t a weight on it. But I’d guess around 15 untrimmed and 12 ish trimmed.

I"m looking at getting the Davy Crockett but I'm a little concerned with the size. It looks like it cooked that brisket just fine but how often, if ever, do you wish you had a larger smoker?

Garrett Harper well I own 13 different grills. I own the Pitts and Spitts Maverick 1250 so I bought the DC for a small grill that was easy you use for quick cooks.
