Eddie Van Halen only played the solo 6:59. The rest of the guitar work was done by session musician Steve Lukather. The Isolated Tracks channel has video of this song with just the guitar parts, and Lukather talks about doing Beat It on Rick Beato's 2nd channel.

Fun fact, since Maggie mentioned the producer: the producer for "Beat It" and indeed the entire "Thriller" album, was the legendary Quincy Jones, who worked with Michael on several albums during this period, including (I believe) "Off the Wall", and the follow-up to "Thriller", which was "Bad". Those three albums were arguably the most popular and the most commercially successful of Michael's career.

I've never actually heard it explained how Eddie Van Halen rearranged the song. The guitar solo itself is pretty much done over a verse section, so it makes me wonder if he suggested to Lukather to have that "Beat It" background singing breakdown over E to lead into the solo section. A lot of VH music has that quality, a breakdown section after a chorus to lead into the guitar solo, with the breakdown or the solo sometimes even being in the relative minor key to the song's major key.
