I always have buttermilk and heavy cream on hand for cooking, and I never end up using all of it, so this was a great way to reduce waste! At most, this took me 30 minutes to do. AS she said GHEE is not used that much in Chinese cuisine however it is used a lotttt in Indian cuisine... We Indians take our ghee seriously. Seriously i mean it is put in almost all the dishes. The taste of ghee is slightly different than butter and a lot richer... Thanks fr the video

The smell of ghee comes when there is a little milk substance present in the butter. The milk part gets burnt in butter and thats what make the amazing smell.

When u heat the butter and remove the top layer what's left behind is ghee.
This is the way my grand mothers used to make (buttermilk, butter, and ghee) , they were using fresh milk instead of full cream and adding rice to the boiling butter to make ghee.

@@happyfoodie7836 The same way you did it in the video , the amount of butter depends on how much fat in the milk (they were using fresh milk from cows). sometimes they cover it with a blanket to accelerate the process.

I am Indian and my grandma used to make this in our village. She used to make the yogurt in an earthen pot hanged from the ceiling. Clarified butter or ghee Is our magic ingredient, we use it in everything. ☺️☺️
This is the house hold work we grew up watching in India as children, they never started with cream but whole milk, boiled and with a starter turned into curd ( dahi) yogurt in west, which is churned by hand to make butter milk and separate white creamy butter , not the solid brick you see here , creamy white floating butter, half consumed fresh half turned into ghee. White butter is now extinct even in India now but ever taste it , it’s the most delicious thing you can ever hope to eat. The wooden churner is still remembered as a must give gift to a new bride though now mostly ceremonial, surprising now to see in a new light from a new part of the world ..

@@vandanaprasad6954 I used yogurt. Didn't had buttermilk. Also made ghee from the same butter. It was great. Fermentation is the fastest method to obtain butter otherwise it takes a lot of time and churning.

@@vandanaprasad6954 I don't live in India. I am currently living in Norway so I cannot use fresh Malai. Although I love butter made from malai. It has different taste and it is white in color. I used heavy cream (like Amul fresh cream) and store bought yogurt. You can follow the same recipe just add curd in place of buttermilk. However you can easily get buttermilk in stores if you are in India. If you have malai from milk then there are many other recipes on youtube.

I came to this video after watching how the Victorians made butter in England in the 1800s. This method is so, so much easier than theirs, with the modern mixers. I might give it a go, and use some old fashioned wooden butter pats to shape it.

I've made butter at home in this exact way, just in a smaller quantity! It's super delicious, has a slight tang from the buttermilk, and it's versatile. You can add salt, or a bit of sugar, if you want something sweeter. I make mine with kosher salt and herbs, like chives!

I collect cream from my boiled and later cooled milk everyday and store it in fridge every single day, after around 10 days ,good amount is stored, i take it out from fridge in the morning time add some curd mix it with spoon and keep it aside for up till 5 to 6 hrs , then churn that cream which we call fermented malai with the help of blender, in few seconds visibly butter starts forming , then add cold water and churn again , u can add ice too. In no time nice clear chunks of butter is formed, take it out from that watery buttermilk and transfer it to pan, heat in medium flame , stir in between and your ghee is ready. If u add betel leaf while cooking the ghee will me more granulated type. Making ghee in India is very common and mostly it is prepared in almost all house. Lots of love from India 🇮🇳🇮🇳🇮🇳

I don't speak chinese ..but method u showed is accurate. It's important to preserve n share age old method in age of store bought , processed food age. I also love u went till ghee step, being an Indian myself. I remember myself helping my mother churn curd to separate butter. We also scraped butter stuck to vessel. This butter we used to apply on lips and knuckles. It's excellent moisturizer.

Update: Made it. It's delicious! It's softer and silkier than store bought butter and the flavor is wonderful. When you are whipping the cultured cream it tastes and smells exactly like sour cream and the end product tastes very similar. Spread over toasted bread with raspberry jam it's truly to die for!

In Algeria, after melting the butter and get off the rest of the water we add salt to it and we keep it for years to use in some traditional dishes

@@szeernsiow no it doesn't because it has salt in it.. But it gets stronger taste by time, so from time to time we add more butter to keep that taste lighter... And it is really healthy if you believe in alternative medicine.. For example breathing problems we use this butter_ instead of oil_ to fry eggs and eat them in the morning before anything else even water.. That's really helpful
