At 3:40, if the circuit has only a copper wire and a battery, it will cause a short circuit, the battery will get instantly discharged, and no current will flow subsequently. There must be a resistor in the circuit to prevent a short circuit. When the current direction is reversed, the iron filings will form the same pattern of circles. The direction of the magnetic field cannot be observed from the pattern of the iron filings. A compass needle is necessary to determine the direction.

Yes, Electrons flow from negative to positive terminal. Current always flows opposite to electrons. So current would flow positive to negative terminal.
