just made this, my first carmel sauce ever, and rocked it. tastes so good! :) the only thing i did different was add a tiny pinch opf salt and left out the vanilla

FYI, he was talking about turbinado sugar when he said less processed. brown sugar is regular granulated white sugar with molasses added back in afterwards. turbinado is the less processed "raw" sugar.

The recipe/cooking of it, with a tweak, gave fine results in this house. Cooling the pan, while whipping over an ice bath, worked well. Video worth watching to get the idea. Many of us couldn't present well, either.

I add a bit more milk to my recipe so there is no need to reheat for the same consistency. In fact I experimented using evaporated milk instead of cream and couldn't tell the difference. Also add 2 tablespoon of corn syrup to prevent crystalization.

I think it's an alright presentation and remember he did say you can add ice cream to that, and then the extra caramel wouldn't seem like so much.....He's just basically showing us all how he makes caramel and doesn't care about the cupcake....lol

@respectbluder It is either an unrefined or partially refined soft sugar consisting of sugar crystals with some residual molasses content, or it is produced by the addition of molasses to refined white sugar. It can go either way... even with 'raw' sugar, they sometimes add in the molasses afterwards.

@myviews7myworld The flavor of the caramel might get lost in the chocolate of the ganache. You might try making a caramel flavored pastry cream instead. Rather than making the whole caramel sauce, you could try incorporating some caramelized sugar at the end of the pastry cream process.

When I make very small amounts of caramel sauce and don't have butter I had a very small amount of any milk I have as long as its not skim. As long as it has fat in it it will kinda work. You just have to try for yourself.

Caramel is made with white sugar Butterscotch is made with brown sugar.

tasty, but it becomes very thick and less like a sauce when using corn starch. When dry would produce extremely hard candy.

That means your mixture was hot and your cream was too cold so when they met the sauce crystalized, next time add gradually and wisk it in and make sure the cream is more room temp

Darn, i kept it on the stove for too long and the sugar was near burnt, it left it with a burnt flavor so it wasnt very good, but ill probably do better next time.
