I literally had to go back and listen to Mariah herself singing-reading the "Just Like Honey" chapter from her memoir, which is about this song. Here's a little snippet (I won't talk about the actual context of the events which inspired the song): "My All was the realest, boldest, most passionate love song I'd ever written. I've brought to it Spanish undertones, the warm breeze, the ecstasy of desire and the agony of separation that I remember so clearly. (...) This song was about life and death, and I didn't want it to get lost in any over-the-top schmaltz. I needed it to be strong and simple. I wanted the vocals to be the centerpiece, the focal point in the mix, with a stripped down track behind it. It was all about the emotion, the soul, and I sang it as if my life depended on it."

You have to look at Mariah's mouth to see exactly how difficult the notes she's hitting are even though they might seem simple! Nah that was all Mariah. She wrote this song about Derek Jeter on her way back from Puerto Rico I believe (hence the Spanish guitar) P.s. Mariah has written like 95% of her catalog on her own. 1. Of course, covers are not written by her. Example: I still believe, Without you, Out here on my own etc. 2. For many of the songs when you see a "co-writer" like Walter A., it's not necessarily because they wrote anything. Most of the time they help with writing the MUSIC because she's only an amateur piano player. She needs someone to bring her melodies to life, and so, credit must be given. Also, you may see a "co-writer" because you have to give credit for sampling someone else's song. So, she would do that as well.
