Barry, we've been OVER this! Using water as a TOOL for boiling or steaming something doesn't count as an ingredient!😜
@mrbarrylewis5 жыл бұрын
The internet (comments!) would disagree
@MichaelBerthelsen5 жыл бұрын
Barry Lewis Well, they're WRONG!😂 If it doesn't go IN the food, it's not an ingredient. Otherwise all your food would contain steel, plastic, etc. from the pans and bowls, and you can only use a greased frying pan to cook an omelet with nothing but egg. No salt, unless you use a steel whisk and pan. And that makes no sense!

The water for the creme brulee is part of the cooking medium, part of the pan, at least to my mind. As would be oil in a fryer or salt or cooking spray. I think so. Barry? (Love your videos!)
@koenvandamme69015 жыл бұрын
The reasons for the water are simple: for crème brûlée you don't want to actually *cook* the mixture, because this will basically turn it into a flan (because of the yolks). Since water can only get so hot before it evaporates, it's great to make sure the cream doesn't get too hot. The evaporating water also prevents drying to some extent. You can do it without water, but you need a good oven to guarantee success (one that has 5 degrees Celsius deviance at the most). That being said, an overcooked crème brûlée is still perfectly edible, it's just the wrong viscosity.
@Rovo1885 жыл бұрын
Jeez... Water for cooking purposes is NOT an ingredient!! With that logic the hot air from your oven would be an ingredient too! 😂😂
