I’m Salvadoran and I keep pickled onions in my fridge all the time, but why do you add sugar and heat/boil the mix? I do them differently: I use lots of lime juice, instead of vinegar, and just a little water to dilute the juice a bit. I also add a local variety of tiny hot peppers, called chiltepes, which I crush a lot, and some salt. I put everything in a jar and let the lime juice pickle the onions. They are ready to eat in an hour or two, but get tastier in a day or two, when the onions are fully pickled and the hot peppers have yielded their flavor.
