I freaking love pickled onions. I do a few things differently though. I use red wine vinegar. I don't boil it so it keeps the snap a bit longer. And I add a bunch of coriander seeds and some black peppercorns.

I just made this. OMG it is SO GOOD!!! I used a hamburger bun for my wife's dinner. She loved it. I'm doing Atkins/Keto so I just ate about 12 oz of the chicken thigh cooked like this. Absolutely amazing. His mayo mix is a little deceiving. I had to use a lot more hot sauce to get it warm (not hot, just warm flavor) other than that this recipe is complete fire. Great job on this.

Added some garlic, lemon, sumac, and powdered toasted cumin in the marinade. In the burger, also added chopped jalepenos Have followed your recipes for a while now, thought to post a thank you note for all the great work.

Wow! I have to admit I went into this one with rather low expectations (mainly because of the mayo), but WOW! Turned out way better than I thought it would. And, and the pickled onions, yum! Reminded me of the lightly pickled daikon side dishes in Korea. Even did a small experiment using some extra panko breadcrumb with a couple of the cutlets. Turned out pretty good too! Thanks Ethan!

I’m Salvadoran and I keep pickled onions in my fridge all the time, but why do you add sugar and heat/boil the mix? I do them differently: I use lots of lime juice, instead of vinegar, and just a little water to dilute the juice a bit. I also add a local variety of tiny hot peppers, called chiltepes, which I crush a lot, and some salt. I put everything in a jar and let the lime juice pickle the onions. They are ready to eat in an hour or two, but get tastier in a day or two, when the onions are fully pickled and the hot peppers have yielded their flavor.

Hey Ethan! Really like this video of yours! I tried clicking the link for the cast irond griddle you use, but it links to a saucepan. What is the size of your cast iron griddle? Or where can I find the one you use?
