A little bit of unsolicited advice: I find it better to use the cooling rack to chill the puff pastry in the fridge, and then use both cookie trays to bake the dough. That way you get even heat, the dough puffs evenly and a bit more compact, AND you can use the cooling rack to actually cool the dough.

If I'm using vanilla extract, do I still need to preheat the milk, or can I just stir the cold milk into the egg mixture then transfer to a saucepan and heat it up, then add the vanilla after the custard has thickened?

Why didn't you use your one pot method for the pastry cream? Is one method better than the other?

I was going to ask the same question. I used the one pot method for my first foray into pastry cream and it was terrific!

This is a wonderful looking dish and doesn't seem too difficult. I think I might try it. I have never used puff pastry, would you use a serrated knife to slice it?

I wouldn't use a serrated knife because you wouldn't be able to cut it properly and then the edges wouldn't look as clean

We Greatest due Respect, you have No Clue, about the Real Napoleon Pastry Desert is made!! 1- You wouldn't possibly consider, buying the frozen dough!! I've had Multi-layered Napoleon since, I was a little kid in 1960's!! What I had was made Outside the U.S. made by professional Pastry Makers, born in Western Germany & Netherlands (the country, that a lot of us in the U.S. , Erroneously, call Holland 🥺😳 2 - I think you've eaten the Real thing or you'd Never Say "This " Browns" really good 🤩 The last time I had it was in the beautiful Bad Homburg W. Germany!! And what goes between 5 or 6 Multiplayered puff pastry is Bavarian Cream!! And remember, it's called "Bavarian Cream" because it was first made in Bavaria, Germany!! Espresso in the cream??!! Now that a new one. Espresso in the Cream!! And Chocolate is great on Eclairs, however all the pro pastry maker in or outside Germany, other European countries just add powder sugar, because it distracts from the delicate and heavenly flavor of Real Puff Pastry, made with Real Butter!!

Oh I just checked "Schar" frozen Puff Pastry as well Pepperidge Farm, and Neither one has Butter it them😟 And as for one the Select Brand sold at Safeway & Albertsons, they have Onion in them. Now that would be just Disgusting 😡🤮

You didn't demonstrate the cutting technique. You can't just cut it with an ordinary chef's knife, you have to use a serrated knife.
