Pro tip: add a tablespoon of baking soda to your pasta water before adding your pasta if you're using Italian style noodles for Asian dishes. The alkalinity of the water gives them a similar profile as actual Asian style noodles. Tastes just like the lo mein at your local chinese buffet, i swear.

I was taught by an Italian chef to add a good amount of salt to the boiling pasta water, for taste and texture. My mother in law was Sicilian, and she said that she never heard of Italians putting olive oil in the pasta water, but that sea salt is mandatory. It makes sense to me, because oil might cause the pasta to become less sauce absorbent🤷🏻♀️

The oil on top of the pasta water breaks up the starch bubbles to prevent boiling over. You can use a wooden spoon across the top traditional style. The oil on top is mostly for the lazy so they don't have to think about it.

Just a couple of suggestions from an Italian. -You don't need to put oil in pasta water, just keep it moving enough before it returns to a rolling boil and the pasta won't stick -Strain the pasta a bit before it cooks to "al dente" so that when you mix it with the sauce it finishes cooking perfectly Other than that, I've got nothing to say, it was a pretty good dish.

@ some put oil in the pasta cooking water to prevent sticking. If you’re making pasta shapes for a cold pasta salad then o.k. I add a little olive oil after it’s cooked.

@Falahola316 No because the oil and water stay separate cause they have different consistency. So the oil doesn't help the noodles in any way. If you don't want them to stick I suggest stirring them every once in a while

@@Falahola316it doesn’t do anything. The oil never mixes with the water, sits right on top and is poured out when you drain the noodles. Save your oil, add a little of oil after they’re fully drained if you want to avoid any potential sticking.

Adding Oil to your pasta water is a bad thing. It counteracts the starch that is naturally on the surface of the pasta. Your pasta will absorb the sauce better and stick to the sauce better if you don’t oil the water. This is what I’ve been told by Italian chefs. Thank you for the recipe
