Savory, salty, and toasty: the soy, miso, and sesame oil in the seasonings are umami-rich ingredients, as are tomatoes, so there is a ton of deep flavor to be found here. A couple words of caution: the recipe calls for just a pound and a half of tomatoes-a single beefsteak could weigh close to a pound. You might be tempted to add more tomatoes. But stick to the weight: This is not a deep-dish pie, and you’re not going to wind up with layers upon layers of tomatoes. Too many tomatoes will flood the crust with liquid, and you’ll end up in soggy bottom city. No one wants that! When you are spreading out the panko, make sure to push them all the way into the edges of the crust; because of the overhang, moisture can get trapped there, and you want there to be panko to absorb the excess.

The basil & black sesame on the bottom with bread crumbs is a great idea. This recipe validates my love of tomato topped Vegemite on toast :p

Made this tonight and the flavor is just amazing but you absolutely have to blind bake this crust before adding the tomatoes. It was sooo raw and soggy, if it had been baked first and then had the panko over it I think it would have been perfect.

I really loved that tomato corn salad from last summer, I've been excited to bring it back this year. This tart immediately went on my to-make list when I finally have tomatoes in my area! Love the flavor combos you create and inspiration that it brings to a bored cook!

But how long does it cook for? What is the lower temperature that Carla mentions? We are missing this crucial information, please help!

Tried the recipe today, started out at 200c on the lower rack for 10 minutes, then turned it down to 175c for another 10 minutes, then turned on the broiler, moved it to a higher rack and baked for another 10 minutes, it came out beautifully! Both the crust and the filling were amazing, will definitely bake again! Added some garlic as well, which made it even better I think 🥰

Wait, did I miss the amount of time it needs to bake? 400 degrees and then lower it (to 350 I assume) after you put it in the oven, and then bake for how long?

Thanks for the recipe. While I am not a fan of a flaky crust I do love the addition of sesame seeds. When I make my savory pie dough for chicken pot pie I always add onion/garlic powder along with S&P. I've never heard of adding bread crumbs to the bottom of a pie crust but that will definitely remain in my toolbox going forward. Thank you to the entire team for this recipe.

The crust recipe/technique looks really cool but not beginner friendly... Getting the butter texture and the hydration just right seems tricky. Did you have any less experienced cooks try to make it? How did it go for them?

What if you made the tomato filling first and then used the juice for some of the pastry water? Would that work?

i wouldn't do that ... the juice is a mixture of fats, solids, and liquid and to hydrate the crust you really just want water. but, like your brain!

There is a whole playlist of vegetarian recipes, I am pretty sure at least some of them are vegan eg. green grain salad, crispy smoky rice, etc.
