Make sure milk is not too hot. You're putting too much air in. 2 (flat white) - 4 seconds (latte) the surface (maybe 6 for a cappuccino foam) , I don't centralise but tilt and aerate the shallow side at the surface for that period. Then swtich to the opposite deep side next to the wall to generate a vortex. You can fractionally move from the side to the middle and the vortex will increase but not too middle as it will start drawing in more air. Don't bring it back to the surface as you just did as it re-aerates and destroys the nanofoam. Vortex 20 - 40 seconds. As soon as you stop it wants to seperate over time. Quickly tap out any last air bubbles and gently transfer to a second milk jug (very important as homogenises the milk foam) tap out again then immediately keep swirling (it wants to seperate) and then pour.

There's a lot of user error. Use kesser milk, and tilt the pitcher to get an actual vortex. Youre suppsied to see an increase int he volume of milk, which obviously didn't happen here. The principles of incorporating air are the same wich the spring or blade foamers
