Try "dalgona coffee!" It's essentially a coffee drink where the instant coffee grounds are whipped with water and sugar/sweetener, in equal parts of each (I use a tablespoon of each), until it's a light and spoonable foam, almost like whipped cream. This foam is then served on top of either hot or cold milk, and stirred in! Emmy did a video on Dalgona coffee, if you'd like to copy her method. I used my little electric milk frother, or an electric hand mixer to make it. Also, she cuts her own hair! It IS cute!

I found that the trick was to back right off on the heat once the sugar melted. It only stays at the honey-blonde colour for a few seconds. If you go a tad bit further into the caramelization the end result tastes a tad bit too burnt for some people.

Did urs snapped after? Mine came out so good but left them to cool down and I heard a snap... Went to check them and all them were broken!!!! Something I'm found wrong??

@@dangori2974 Same. I've made about 40 at this point. Each time I get the recipe right (seems to be hit or miss, using an egg pan over an electric stove), I have them out there cooling and then they crack. I'm so frustrated lol. I've tried leaving them there for 20 minutes. I've tried moving them, letting them cool, etc etc. I just can't seem to get them right and not have them crack. =/

@@rach2509 same! Kept throwing away all of them until I decided to used them for a dalgona coffee instead but... I was like u, so happy having them so prettily finished and then that daunting 'crack' out of nothing! I researched the issue but I only can give it a scientific explanation and it is the temperature in my kitchen. My kitchen was cold when I was making them so I assumed it was moving them that the temp shock was the reason for cracking. I thought it was the recipe but I tried 4 different ones (ratios) and all were working AND cracking on their own while cooling. I finally managed to have 3 survivors but I guess it was because I was using the oven at that point for my baking. However lol those 'whole survivors' became soooo sticky and soggy because I left them in the kitchen top and when the oven was off, the kitchen went back to our 'lovely' cold and muggy weather aaaahhhh I have made dalgona candy before (during summer) and I actually had to smash it with a rolling pin because of how stable it was (this was for the drink, no figure needed).

One time when we were kids we stole my friend's sister's Dalgona pan and tried to make it ourselves... We almost burnt the house down; our punishment was to eat the horrible burnt candy that we made with extra baking soda on top. We didn't try again after that... In my experience, Korean discipline tends to follow the philosophy of "let the punishment fit the crime"... It would not have made sense to physically beat us, or to take away our Nintendo, since we didn't beat anyone else, and our misbehavior was not Nintendo related... but we did have to literally eat our own mistake; after we suffered and gagged it down, they gave us plenty of water and fed us a nice dinner and hugged us and told us that they expected us to be good boys from now on, and then we were free to go back to playing and having fun like nothing ever happened... Korean parents are actually very fair in that way.

I agree! I think it's great that people are being exposed to Korean culture, even if it's through just a candy or K-drama. Back in the 80s hardly anyone knew what or where Korea was. 😂 I guess what might be upsetting to Korens is people trying to capitalize on the trend without knowing, caring or having curiosity about the people, history or culture. I'm hoping all those old and struggling Korean street vendors are selling out!

@@tyler1fansstuckin8thgrade31 Her method was far different to Babish's, he used a kit on Amazon which looked pretty suspect to start with. It's fairly plausible that the difference in technique could make the process substantially more easy.

Great video, Emmy - Just letting you guys know that Ppopgi (korean word that means a random draw, originated in this context for the random draw of the dalgona candy) is pronounced ppop-ki not ppop-ji. The g is pronounced like a k not j (like g in game). Also the double p is meant to be pronounced something between p and b, but I get it if that's hard to say.

Thank you for this interesting information! I love learning about another language and culture. It’s difficult to teach and explain a sound that doesn’t exist in the other person’s language. I have never heard of “ppo” sound so of course I would of never known to pronounce it with a sound that is in between the English “p” sound and “b” sound. I’m Japanese and bilingual with Japanese and English. I always had a hard time explaining the “tsu” sound that exists in Japanese but not English. My maiden name is Matsui so it was something I had to explain often. It’s not “tu” sound or “su” sound. Vice verse in Japanese there is not a “L” sound so pronouncing “vanilla” almost always at the beginning sounds like “banana” for some reason 😂 Chili of course is a hard word for Japanese people too! It’s so funny 😆 Thank you for your Korean language lesson for the day 😁

This is really cool! I don't speak Korean myself, but I'm a linguist so this kind of thing is my favorite. Here's my academic take on the sounds involved, with some fun pronunciation experiments you can try: First fun fact! Linguists (specifically, phonologists and phoneticians) categorize speech sounds based on a few key features- the position of your tongue, lips, etc as you pronounce a sound ("place"), whether your vocal cords are vibrating when you pronounce it ("voicing"), and how you control the airflow out of your mouth ("manner"). By changing these features, you get different sounds! English example: the sounds 't,' 'd,' 's,' and 'z' all have the same place (the tip of your tongue touches the ridge behind your teeth). When you pronounce T and S, your vocal cords don't move, so these are called 'voiceless,' while D and Z are 'voiced.' Try putting your hand on your voice box and alternate between saying S and Z to feel the difference in vibration! Finally, T and D are called stops, because your tongue stops the airflow out of your mouth; while S and Z are fricatives, because the air flows through a little gap above your tongue. Second fun fact: there's another feature of some consonants called "aspiration." When you make the consonant sound, a little extra puff of air comes out of your mouth. In English, we do this on the voiceless stops P, T, and K when they're at the beginning of words (but usually not in the middle of words, nor on the voiced equivalents of these sounds, B, D, and G). You can test this out by putting a thin piece of paper in front of your mouth and alternating P and B sounds, and see how it moves. Then say a word like "puppy" and compare the two P sounds! Third fun fact: back to Korean! We saw that in English 'puppy,' there are two P sounds that are slightly different because of aspiration. But even though they're different, English speakers consider them the same sound. Not so in Korean! For Korean speakers, changing the aspiration can change the word entirely. So saying "pul" with aspiration can mean 'grass,' while saying it without can mean 'fire.' Fourth fun fact: if you know Korean, you may be thinking "Wait! The word for fire is romanized like 'bul,' not 'pul.'" And that's correct! But recall what I said earlier- in English, voiced consonants (b, d, g) are never aspirated, and voiceless consonants (p, t, k) are always aspirated at the beginning of a word. So when an English speaker hears "pul" with no aspiration, they hear 1) the voicelessness of a P but 2) the aspirationlessness of a B. So to them, it sounds halfway between a P and a B! Fifth fun fact: the pp in 'ppopgi' doesn't actually fit into either of those categories. Korean has a third category of sounds called tense consonants, which aren't very well understood by linguists, and 'pp' belongs here. Still, tense consonants are unaspirated, so they have the same quality of sounding kind of like a P and kind of like a B to English speakers :) ^That was super long-winded, but I hope it was interesting! Except she chipped the circle so she just died. =p Also I don't understand why squid Game got so popular when there are so many VERY similar shows. I mean, probably one of the closest would be the Kaiji series. Pretty much the exact same plot and flow and everything, to the point that Squid Game is basically just Kaiji reskinned, with the casino theme being replaced by a more whimsical kids theme.

@@zenithzott9554 I haven’t seen Kaiji but yes, we’ve seen the story before in different variations. But I’ve never seen it as well done as Squid Game. The themes are so well integrated into the plot. The characters all have real motivation. Every little detail has been well thought out. And it’s shot beautifully. Looks like a movie. Plus, the games being simple children’s game makes it more macabre. I heard people saying that Alice in Borderland (similar idea) was better than Squid Game. But it really wasn’t. A lot of things done make sense in AIB. There’s a lot of confusion and characters are lacking.

As someone who has seen the real thing in Korea, that looks a little too thick. In Korea, they tend to make it thinner. At least from the ones I have seen selling on the street. It makes it even harder to actually break the shape perfectly. I remember breaking mine although they don't usually provide a toothpick for you or anything when you get it so I used my hands and despite being careful, I failed immediately.

My neighbor always gave us peanut brittles but it's nothing like the texture of dalgona. It's really just thick hardened caramelized sugar with a bit of butter. The taste is similar (since they're both caramel after all) but the texture is nothing alike.

South Korea has come up with some absolutely amazing zombie movie/show, entertainment from Train to Busan, to Peninsula, to Kingdom...presumably made by the same company. I can see that may be the creator was creating assuming a 2nd season but either way I wished there was more explanation or something... plus you know there’s no way that Chishiya figured out that underground location just with that crazy “map” that lady had in her pocket! 🤣 (Sorry I got kinda excited cause you are literally the first person ever to mention that show! 😂)

@@ayamatsuiaya I was also pretty annoyed at how the first season of Alice in Borederland ended, so I found the manga it was based on because I didn’t want to wait for the second season (if it’s even going to happen because, you know, Netflix). It’s so good, and the show doesn’t do it justice, in my opinion. It was published several years back and it has an ending, so if you’re really interested in the series, I highly recommend it. The ending is literally a head trip (I won’t say anymore so no spoilers).

Just to help clarify -- "Poppgi" is pronounced POHWP (the "o" sound like in the word "go")-GEE (the "g" sound like in the word "guitar"). Spelled 뽑기. POHWP means to "select" or "pick out"

Does anyone know why every recipe for making dry caramel says not to stir it (or else the sugar will crystallize), but making dalgona includes stirring the sugar the whole time? It’s the same as making a dry caramel, up until the baking soda is added.

This is also known as Honeycomb candy. I think it is more common in the UK, but my mother used to make her peanut brittle exactly like this, just with the peanuts and butter in it. Best peanut brittle ever.

This recipe is very simple and adaptable! I tried making it in the microwave with a tablespoon of sugar in a little silicone cup. After microwaving the sugar alone for nearly 2 minutes, it wasn't even warm. I added a few drops of water, and that worked really well! I also used an oiled piece of aluminum foil since I didn't have parchment. I had some tiny flower die-cutters for bento veggie decorations and that was the perfect size for my mini ppopgi! P.S. I survived.

Aside from a few major issues toward the end…unanswered and ham handed finishing points I was so deeply engrossed in squid game I felt a tad ashamed 😂 I have always been averse to fluffy fictional things but there I was, September 17/18th and I saw these colors and the word “squid” so naturally I clicked (ooooh shiny, because we are all crows) and there I was commuting with it on, and sneaking it on break at work. Now I’ve fallen for both queens gambit AND SG and I feel so…pedestrian 😂 But them squid shits is heckin good fun! I reckon you’re too busy to watch, and I had to cram it in but the vicarious TERROR was somehow perfect in this era 🤷🏻‍♀️ Thank you for making this candy, I always enjoyed the game! Had Korean neighbors as a kid and their omma made ppopgi for parties. She said “it’s old fashioned, from my childhood, don’t break it hahahaha” It’s delicious, and I’ve heard it called honeycomb candy, and dalgona so I’m always grateful to you for elucidating the nuances, thanks again! Sugar vs glucose :) I also know vinegar and baking soda may be added or omitted. I’ve never made it but I’ve made peanut brittle, seems close, minus the fat.

Ohhh! Since I know you love learning the food science, you'll love this fact! Making caramel from sugar isn't "melting" like making water from ice. It's actually a "thermal decomposition." The sugar is a carbohydrate, which just means it contains carbon, hydrogen, and oxygen. Heating it breaks it down so that it loses some of its hydrogen and oxygen in the form of water.

This is a very similar base to the peanut brittle recipe I grew up with in South Georgia. That bitterness you noticed is probably the baking soda which I actually think adds to the flavor when combined with a little butter and vanilla.

Surprisingly, it seems that you understand the difference between dalgona and ppopgi because you think you have an understanding of food and not just following trends. Dalgona is similar to western honeycomb toffee, but it was originally made from glucose blocks and now uses sugar. Candy made by melted sugar and pressed is ppopgi.
