For France, we go for sandwich (with a really crunchy baguette), you can add a lot of things either cold or hot :) and it's easy to bring to any outside activity as well.

Lots of people try to do ramen but you simply can't beat a Japanese to it. This was simple and it had everything that matters done right. Umami bomb from the niboshi and konbu, char siu done right, ajitama. I bet this still gives a nice feeling as a long cooked and more complicated ramen. I think the only thing that could've been added was an aroma oil (shallot/chicken oil), otherwise nice job.

I’ve watched a lot of ramen videos looking for an authentic and practical recipe and so far this is the best one. Too many videos overload on preparation, throw too many ingredients in a bowl, or are a little too unambitious for me. This has just the right balance and I can see it gives great results. Personally, I love miso/chicken ramen and would love to see a recipe based on that! You can make a lot of content with just ramen! The world of ramen is so vast 😎🍜 お疲れ様

Ramen is a dish worth mastering. It requires too much preparation to just do it one time or once a year. But when you master it you can have one or two bowls per week at minimum effort and it's totally worth it

This is a good first recipe for anyone interested in making their own ramen. All of you who are interested beware that the effort grows from here on. For all ramen nerds and people that have a deeper interest in ramen here's some pointers. Generally ramen consists of 5 major components. 1. Broth (Base) 2. Tare (Taste) 3. Aroma Oil (Smell) 4. Toppings 5. Noodles 1. Broth A broth is mostly made from bones. Extracting the flavour from these bones takes 8 hours of straight cooking. Our champs uses a hack by using minced meat. The flavour can be extracted much much faster, severly cutting down on cookin time. Which is a great idea. 1.1 Dashi Previous to cooking the minced meat our champion soaks kombu and niboshi. Making a dashi. As a rule of thumb: A dashi is a stock made from ingridients from the sea. It can be used for tares and broths. 2. Tare A tare is a sauce that gives taste and flavor to the broth. There are three types of tares: Shio (Salt), Shoyu (Soy Sauce) and Miso (Miso paste). Our champion does not make a dedicated tare. Instead he uses the dashi together with salt to make a tare workaround. So the broth, tare and dashi combine the two first points into one. Greatly cutting down on cokking time and possible food waste. 3. Oil The aroma oil give smell to the ramen. It also stick to the noodles, while slurping making the noodles even tastier. Here no oil is used, but it is more of a final touch than strictly necessary. If you want to add some aroma oil you can use: Sesame oil, chilli oil or some rendered pork or chicken fat. 4. Toppings The toppings presented in this video are great and you will not find the need to alter them. You can marinate the egg for up to 4 days. This makes the ajitama even tastier. 5. Noodles Making a guide for ramen noodles would be alot of effort. You should buy them if you can. If, however, you have no access to ramen noodles you can use some spaghetti and cook them with some baking soda for a similar effect. Overall this recipe is a great start and I'd love it if it motivates anyone to get into ramen. Above are some general ideas of the components of what makes ramen ramen. I'd also love to see if our champion would make a full fledged ramen =)

Nice video as always, but i guess this is a huge and nearly impossible request, would it be possible to make gluten free and porkless ramen ? I allergic to both, so its very hard to make good ramen. Thank you Ryosuke-San

You can definitely do it. Use gluten free noodles or go noodle-less. Shoyu (soy sauce) has gluten, so replace with tamari if your recipe calls for it. Then you just need to make your stock. Ramen stocks all have countless varieties, so just find one that uses chicken and other ingredients instead of pork. Some styles you might consider include miso, shoyu, and shio ramen. Essentially, what ramen is is stock + tare + toppings. Just replace the ingredients with gluten and pork with others and you still have ramen.
