I LOVE this recipe, when I think to put it together the night before. The best flavor and the best texture of any waffle I've ever made. And no whipping egg whites!
Amazing Overnight Waffle
Adapted from Mollie Katzen’s recipe in the Sunlight Café cookbook, as found online in multiple places
Makes about 5 waffles.
2 cups all-purpose flour
1 teaspoon yeast
1 tablespoon sugar
1⁄2 teaspoon salt
2 cups milk (I used buttermilk)
6 tablespoons butter, melted (can sub canola oil)
1 large egg
Combine the flour, yeast, sugar and salt in a medium sized bowl. Add the milk and whisk until blended. Cover the bowl tightly and let sit overnight (you can also put it in the fridge).
In the morning, preheat your waffle iron. Melt the butter and beat the egg in a separate bowl then beat the mixture into the batter. My batter was thick from the buttermilk, but its normally quite thin. Spray your waffle iron if you think it needs it.
Add just enough batter to cover the cooking surface (mine holds ¾ cup). Cook to desired doneness. Stow finished waffles on a plate in a low oven to keep warm if you aren’t eating them as they come out of the iron.
