Hi dear. If you like your cheese to be soft, you can press it for about 40 minutes. But if you want it to be more firm, keep it under pressure for 3 hours. You can keep it in the fridge for at least 2 months, but make sure to put it in the whey or water+salt.

This is as simple as it can be...if I have no thermometer, how do I tell I have to add the vinegar, should it be as it boils or before it does?

Hi dear, there is no need to thermometer. It doesn't matter exactly when. It doesn't make a difference. As soon as you see it bubbling, then add the vinegar. Hope you enjoy it.😇

No,It doesn't taste like vinegar at all, it actually tastes exactly like cheese. Despite this, I always use apple cider vinegar instead of white vinegar. It's really delicious.
