Wow! Nice Biscuits. I use to live in Rome from 2000-2014. I was a home health nurse out of the Cedartown office for Floyd. I use to go down Collard Valley Rd. almost every day. First thing I learned to make when I moved to Georgia was biscuits and sweet tea. My son married a girl from Rome in 2000. I miss it a lot but I also love Louisiana and the food. 😀

When we were poorest, with 3 small kids, no working stove, just a camp stove and an electric skillet, we shopped at Aldi's and I bought powdered milk, shortening and self rising flour. I made 5 lbs of baking mix with a pie cutter and a large Tupperware box. We are a lot of pancakes that year!

Hi, I have just now got down how to make biscuits like I love them with the rolled method like you showed. I am trying to figure out something. My biscuits seem to be better if I smush the lard in the buttermilk in the well of flour in bowl, and then bring in the flour. In this mix the mix is shortening with flour and then the buttermilk. What is the difference?

Does that spoon measure 2 tablespoons. And so you use a total of 1/4 cup of fat? I was wondering because I have seen recipes using a total of 1/8 cup of fat to 2 cups of flour.

Nicola, I would think so! people here use 50/50 lard butter but I would refrigerate the mix if not using within a couple of days.

The baking soda shifts the pH and allows for better browning...according to Cook's Illustrated. Besides, if that's the way your Grandma did it, that's good enough for me. :-)

I made biscuits yesterday with an old Crisco stick in the fridge. Those biscuits were not fit to eat. No more keeping Crisco for years in the fridge. :)
