This dude is amazing. Food is done magnificently, very authentic, but still allowing for a lot of flexibility since he is mindful of availability and various preferences. I love that he speaks Spanish and pronounces words correctly and respectfully. As a Mexican, this man is amazing and his work in spreading the wonders of Mexican food is just wonderful to everyone. I made a very large badge of a similar sauce last year and added pineapple and mango to it for a bit of sweetness. It is incredibly delicious. I gave a bottle to my neighbor and he just asked me if I am going to make more this year.

You just answered a question I had. Normally I use the ferment process but for my next batch I am using the "boil" process. I have my peppers (Scotch Bonnet/Habenero/Fresno/Jalapeno) rough chopped and in a pan already. I still need to add garlic/carrot. When I get home from work I will add the vinegar/water mixture and salt and I wanted to add blueberries for an added flavor. Should I add them during the boiling process or wait and add them in the blending process?

I've been making home made pepper sauce and home made pickled hot pepper relish for 30-40 years from peppers and veg from my garden. It's a great way to use them and nit aste anything. With the sauces I make some a blend of different peppers, some straight sauce of one pepper variety, some I make a pepper and veg blend sauce, others a pepper/fruit blend sauce. One of favorites is a blend of carrot, mango and habanero. the sweet and heat work well together. Oh and it is great if you mix a dash or two into a glass of anejo teguila on the rocks

I started fermenting my hot sauce last year, and really prefer the depth of flavor. You can make this recipe, but add a fermentation step to it and wow! Just understand how to calculate the salt percentage in the brine and the importance of pH in being safe.

@barbaravanerp4598 you have to add a specific amount of salt by weight, and then use either sterilized glass jars or a vacuum sealer (check out chillichump here on YT) and allow it to ferment/pickle. I don't remember how much time it takes, but there are plenty of videos explaining - chillichump has the best videos!

This is the best hot sauce recipe ever! We have been making it for a few years. So long story short we grew tons of plants and they have not done well😂😂😂 but that's okay pepper plants live forever as long as you take care of them. I'm just gonna re plant them out of their pots into a permanent spot in the yard. Trim them back and cover them when need be. So they should do ok. We have root knot. But I will grow some more next year in pots as well. I will get my year long hot sauce harvest😂 oddly enough I bought some organic seed and they are red?

Rick, thanks for this recipe and all of your cooking videos. You are a legend and still love your content. I lived for 20 yrs in Soho NYC and they have a restaurant called Blue Ribbon. They have a similar recipe for this hot sauce and serve it on the table. They sell it and also use it for their wings but also I put it on their fried oysters and other food. So good! ❤🌶️🫑🇲🇽

This recipe came out just in time! The season almost ended where I live and I still have a dozen of Habaneros and Ghost Pepper pods on my plants that just started to change color and they wont make it before first frost. So they all are going into the pot with some relatively hot annuum peppers (kind of like Anaheim but hotter).

I used Rick's formula to make a chiltepin + pequin sauce with 4 habaneros for aroma and flavor. Delicious. The small downside is that the puree has to be smashed through a double mesh strainer because the chiltepin and pequin peppers are literally full of small seeds.

Hungarian hot peppers make a fruity tasting hot sauce too and are good for people who like less heat than Habaneros. Still hotter than Jalapeños, which are pretty one dimensional.

Can confirm about other peppers. On a 3rd year of using this recipe with aji amarillo (50k vs 300k scoville) and can't recommend it enough. if you have access to fresh ones, try them!!!

Thats recipe makes a decent medium heat sauce. I haven't made it for years as I prefer a more spicy sauce most of the time and can find these medium habanero sauces too easily to make. I traded the last batch I made for a flan and two tortas.

Dry roasting will give you a slightly sweeter flavor and the dark spots can make the finished sauce look a bit spotty and less bright, while this approach softens the garlic's harshness without adding sweetness (and avoids using another pan). @@mykneeshurt8393 I got an Aerogarden on Amazon. It turns the lights on and off on a timer and waters the plants with a small fountain pump. My only gripe is the light only goes up to 12" above the plants, so the plants grow past it. Once these plants have run their course, I'm going to modify it to raise the light at least another foot higher. It works great for herbs like basil too!
