Just did this exact recipe with 10 Habaneros, 1 Jalapeño, 4 Ajacito’s, and 1 Serrano pepper and it turned out great. First time making hot sauce and it couldn’t have been easier. Truly appreciate the help getting started!

I've been making my own sauces for the last 15 years or so. A few suggestions to readers; -sometimes I see people using xanthan gum or starch to thicken the sauce. No need for that, just use carrots to thicken the sauce. They also lower the heat a bit as they are sugary. -I never use any form of sugar except fresh fruits. If your sauce happens to be extremely hot, you can use 1-2 Table spoon of maple syrup too. -I don't prefer chunky parts in my sauces so I always strain the sauce with a sieve before bottling, which makes a creamy, silky, pure liquid, After straining I transfer it to the pan again and heat it a little bit, taste and add more salt if it needs. In this step you can dilute the sauce if needs to be. But rather than just adding vinegar you can also add boiled water to dilute overly thick sauces. Too much vinegar ruins the taste, so be careful. -Remember salt and garlic also acts as preservatives. So if you want your sauce to have a long shelf life, be generous with garlic and salt, unless you are making a fermented hot sauce of cause. As garlic prevents bacteria it will also prevent beneficial bacteria in the fermenting process. -For habaneros; I use white vinegar for a bright fresh habanero taste. But if I'm mixing peppers like red savinas, bhut jolokias, habs then I prefer apple vinegar for a rounder, sweeter taste. -For fresh tasting sauces I just use fruits like mango, nectar, pineapple, apples and carrot. For more complex sauces onions and garlic works wonders. Though you could add anything you want; tomatoes, ginger, celery etc. Also you can add freshly crushed black peppers too for a longer heat sensation. -The more types of peppers you add the more complex and layered the sauce becomes. So try to combine a few peppers rather than using only one type of pepper if you can. -Always use fresh and plum fruits and fresh vegetables rather than powders or dryed ones. Use fresh garlic rather than garlic powder for example. -You can make hot sauce with dried peppers too but it would never be as good as the one made with fresh peppers.

@@smdatri Hello Sonya, carrot is mainly used for thickening the sauce, it is not sugary enough to sweeten a sauce by itself. I use one carrot per batch, by batch I mean 1-1,5 liters of final sauce. To sweeten the sauce, I recommend using ripe fruits like pineapples, pears, nectars, mangos, apricots, apples and so.

Zucchini squash diced added to the pan after the peppers have been sweated makes it come out of the blender almost like avocado salsa. It’s the secret to how most taco shop creamy textured avo salsa is made in Southern California.

@@michaelhone1 about a table spoon. I would maybe use less if you take the seeds out but with reapers your better off handling them and messing about as little as possible.

Nice simple and easy recipe! I used 30 Scotch Bonnet's, 10 Habanero's & 10 cloves of Garlic, all from my garden. Using your same ratio I increased the salt, sugar & vinegar to match the amount of peppers. I also added a fresh peeled, cored & diced Pineapple. This made a little over a quart and this hot sauce is awesome! Thanks for the simple recipe.

I love making my own sauce. I use onion, garlic, carrots, salt, water and white vinegar. Never thought about doing it this way. I have lots of peppers growing so I’ll have to try it!

Cleaned out the freezer and found some of my habs from last summer so I made this! I made chive blossom and sage blossom vinegars this summer so I used that in the recipe and it turned out really nice.

Yes, looks awesome. Pretty much one of the biggest ways I use my combo of garden peppers - hot sauce! Gotta have it in on hand all the time, different blends, heat levels, flavor combos. Looks great. I love your selection of peppers.

Made this recipe, except added 4 small sweet peppers to tame the heat a bit, and added one half of a Carolina Reaper. It came out just as good as you say - creamy dreamy and highly versatile. I put it on my hot dog and carne asada nachos. Will be making a larger batch next and giving them out to neighbors.

I like your take on making hot sauce ,never thought about using something sweet. I normally use onions garlic,and a can of tomatoes, along with vinegar,and the hotest peppers I can find. Thanks !

I've been doing an uncooked version of this for years. Taste is good, though different than the cooked hot sauces. For the uncooked version I start with a canning jar half full with vinegar, add sugar, salt and any spices you like to taste. When you have ripe peppers, wash, remove the seeds (if you want it really hot keep the seeds) and throw them in the jar. Keep the jar in the fridge. Keep doing this till the jar is full. An advantage of this is that you can accumulate the peppers of an entire growing season adding them as they ripen. I only have one or two plants growing at a time so this can take me a few weeks to months to fill the jar with any peppers that I have left over. The vinegar will soften the peppers up after a few weeks. Throw the pickled peppers and some of the liquid in a blender and blend it down to a smooth paste, add the drained vinegar to thin it down to the consistency you like, done. The hot vinegar that remains can be used to add some heat to recipes that use vinegar.

I tried this but I used sweet bell peppers and only one ghost pepper and one scotch bonnet. I then used mango in it as well. It was not too hot, and had the perfect kick and it was absolutely delicious. I will be making this in large batches to put away and give away to friends. Great recipe thanks for the share.

I have made this recipe twice now and it is amazing. One note though. If you use the upper end of peppers (17-20) consider using around 2-3 tablespoons of olive oil. Unless you'd rather add more vinegar to get a more fluid state to pour.

I just made this recipe - with only orange habaneros - but tweaked it slightly. I mixed 1/2 pound of chopped pineapple with course ground sugar in a bowl and baked at 425 for ten minutes and then flipped for another ten, and I added that in in place of the sugar and it came out incredible. That ended up making about 12 oz of sauce though, but man is it so good! Thanks for the recipe!

I used this recipe as a guide to making jalapeno hot sauce. I used less sugar, roasted the peppers and added coriander seeds while cooking in the oil, and added cilantro when blending. I am pretty happy with my first attempt at making hot sauce. Thank you! I am also trying a fermented jalapeno hot sauce too. Thanks for the inspiration. 🪴😊* I wish I could upload a picture of it in the jar. It's a nice creamy green sauce with flecks of char throughout.

I happened to stumble across a video and started watching different ones. Very very interesting and good information. I don't grow sweet peppers any longer, I have switched to hot peppers having grown some in the past with the Bell peppers. I now grow in the garden and in pots on the deck. I started some Fatalii seeds in March 2020 and grew 2 plants in Folgers coffee cans, a 39 oz and 24 oz. Come fall I decided to over winter them, something I never did and it was a spectacular success! By mid November I started to pollenate the flowers with a paint brush, something I never did before, and to my surprise I had peppers all winter! I picked 101 peppers in 2020 and another 36 so far this year. The plants were severely root bound to say the least and lots of yellowing leaves so leaving them in pots again this year was not an option. Also the pods were very small just 1 to 1 1/2" vs 2 1/2 - 3" long when grown in the garden but they are hot. I fertilized with Neptune's Harvest Fish and Seaweed emulsion every 7 days. Yesterday I cut open the plastic cans and put them into the garden. They grew a lot over the winter and I was barely able to fit them through the door when I started to put them out on warm days on the deck in April. I too live in Connecticut, I'm in Litchfield County. What part of CT are you in? I'm going to subscribe and follow your channel. I've been gardening organically for over 28 years but you can always learn something new!

Made this recipe with big sun habaneros and added peaches in syrup to the mix and left out the sugar that was in the original recipe. Sauce turned out amazing!! Very sweet to start followed by that intense habanero burn

I;m making 5 times this recipe. For those who want to know how much crushed pineapple to use instead of sugar, in my case it is 1/2 cup. If you are using the 1 bottle recipe, use 4 tsp or a bit more.

I would like to give this recipe a 10/10, I did everything like you said except I used MOA Scotch Bonnets instead of habaneros. You are so right when you say this recipe brings out the peppers flavors without distorting them too much. The SB are Insanely fruity. Thank you!

That sauce looks great. I've not tried making a sauce like that I just chopped them and used mayonnaise, salt, sugar and olive oil and blended them. I never even cooked it.

Looks like a tasty kicker! I'll try this one maybe closer to the summer time. Tonight, I made a simple but delicious Habanero & Tomato sauce, for a rich and tangy accompaniment to just about anything savoury. Here's the recipe for anyone who's interested: 2 ordinary tins of chopped tomatoes 5 medium-sized dried Habanero pods 1 tablespoon of rapeseed oil A dash of vinegar 2 medium-sized cloves of garlic Push the dried pods down into the mix, blend all ingredients thoroughly then bottle and serve. It should make enough to fill two smallish bottles and a small mayo jar.

Finally found the time and tried the recipe myself. Used a blend of different peppers and a bit less vinegar and it came out awesome. Adding a dash of onions and tomatoes gives it a bit more flavor.

I make a variety of home made hot sauces. Onion in any form is a good addition. I've used yellow, red, white, and even scallions (both the white and green parts depending on the sauce). I've used other items like tomatoes and carrots as well as fresh squeezed citrus juices (one recipe I make calls for orange, lime, and lemon juices). Will definitely give this recipe a try as well. White habs FTW!

Awesome video. Can't wait to try this. Just ordered some Habanada seeds. I LOVE the flavor of Habaneros but like a medium hot salsa. I just roast them and take out the seeds and veins to get that wonderful flavor without too much heat. Thanks for all of your effort and educational videos

Very simple recipe. It's a lot easier to blend it all together first, then cook it all together. Saves a lot of time having to wait for it to cool before you can blend it. Plus if you blend it AFTER it's cooked, your going to have to re-boil it to re-sterilize it.

So I made this using your basic recipe,habaneros with jalapeños and Thai chilies,whatever I could find.added a tomatoe and an onion and a banana at the end to smooth it out . It’s delicious. Cooked it outside on the bbq burner. Had a cut on my thumb and it burned for hours tho. Gloves are a good idea . Thanks for getting me started

I eat a lot of pepperoncinis on my salads so I saved the brine and use it in lieu of vinegar for my hot sauce. I also use karo syrup to sweeten it up in lieu of powdered sugar.

We like it chunky usually, but our blender pulverized these pretty well. Jalapeños are probably best strained since the skins are more thick and tough

I always through either a banana or a mango in the mix. If I don`t have the fruits, I use really good juice (the thick ones with fruit pulp). By the way, you can also add a bit of chocolate or kiwi sauce - for taste, color, and fun 😋 As for storage: I keep it in a cool and relatively dark place. I keep it in the fridge only after opening the container. While the container is still untouched (after filling), I found that it basically lasts forever. Well, never tried forever (haha), but definitely for 3 years (forgot that I still had 2 jars left, never got to use them, thus being surprised to discover them and find that the sauce was still as good as new/fresh).

Just made it, but only had 10 habaneros. Multiplied everything else by 3/4 and I think it came out right! Hot as hell 😁 even though all seeds were removed! Next time maybe will try mixing with some other kind peppers to bring down the spice for the more sensitive in the family 😁

@@PepperGeek I've been using Piloncillo instead of white sugar and it really adds to the "depth" to the sauce. I've also found some devil's tongue peppers that I think are in the habanero family but they add an almost citrus flavor

I mostly make pepper flakes and powder. In Jalapeno, cayenne, and orange habanero ~ Sprinkle lightly 1 of these 3 things, on fried eggs and things! Like chicken, French Fries and things YUM

I grew habaneros for the first time in our garden this year (first year growing any hot peppers). We are in garden zone 5b. So, our season is starting to come to an end. Sadly, I believe I over watered our habaneros as they are a beautiful orange but sweet like a bell pepper. Have you had any luck with habaneros turning hot after they were sweet? Also, have you had any luck transplanting a mature habanero plant into a large planter pot . Idea being, transplant inside and let it finish off their/produce fruit that is hot.

We've had hot pepper varieties fail to produce hot peppers. Some varieties can apparently lose heat from overwatering, and I believe from reduced sunlight (peppers want 6+ hours per day of direct sunlight). We have yet to overwinter our pepper plants, but you can certainly bring them indoors if the temps go below 50F outside. The change in temp may lead to reduced/no fruiting, so try to keep them in the sun!

@@longislandsurfer This is why we can't bring our potted plants indoors. The eggs are laid in the soil and can be nearly impossible to get out. Some people say dunking the entire plant in soapy water for several minutes can drown them but it is tough with big plants. However, just today I cut down a big plant to be a bonsai plant and dunked it for 15 minutes in soapy water. So far, the aphids are nowhere to be found..we'll see!

Just made this recipe, but didn’t quite have enough habaneros in my garden, so I added a few jalapeños, and some onion to make up the weight. I also smoked the peppers and onion first. Turned out great for my first hot sauce.
