8:32 if we calculate the address in between EPROM and RAM from the starting address of EPROM then we add 128K in hexadecimal to 00000H.But that is not equal to F8000...Why?

The in between area is free to use, there you can incorporate more ram Or eprom, mostly it is not the case as it looks like because the free part is assigned for heap or cache.

It's not necessary that ROM and RAM are taking exact 2 parts in memory.

Sir why are we using NAND gate in case of ROM for connecting A19 & A15? Can we use OR Gate in place of NAND gate ?

no, in case of ROM its working while 19 and 15 are constant in both cases of even and odd so if both are true the out gets activated so i hope you know it should be AND with not
