To Make Croquets (The Virginia Housewife, Mary Randolph, 1824) 3 Chicken breasts, chopped & pounded fine until it resembles ground meat A few pieces of ham or bacon, chopped fine as above. Use more or less depending on your taste preferences 1 cup of bread crumbs + 2 cups for the breading 0.5 teaspoons of nutmeg 1 tablespoon of mustard 1 tablespoon of mushroom catsup OR worcestershire sauce 2 tablespoons of softened butter Salt & pepper to taste 6 egg yolks, whisked Lard for frying Combine the ground chicken and pork with 1 cup of bread crumbs, nutmeg, mustard, catsup, butter, salt & pepper. Mix up well till blended. Take a small chunk of the chicken mixture and roll it in egg yolks and bread crumbs, flattening it a bit in the bread crumbs. Fry in hot lard until golden on each side. These do not take long to cook so watch them closely.

This past weekend we lost power for about 9 hours. At the time of power loss, I was making bread dough and yogurt. I didn’t want to throw them out so after hubs got a fire started in the fireplace, I went to work. I took the yogurt out of my instant pot and put it near the fireplace to continue fermenting. I did the same with the dough. During its last rise, I put my Dutch oven into some of the coals to heat up, then put my dough in it to bake just like you do, Justine! Both turned out perfectly!

I was born in Canada but my parents immigrated there and so I went to a French school and learned about their history. In the history books I remember seeing pictures of how people used to live back then and it made me somehow feel homesick looking at those pictures even though I’ve never been there or even if I was I wouldn’t necessarily belong there but your videos although it’s American it’s quite similar and it makes me feel like I was there even if just for a little while. Gosh im early I love this channel so much, I just wonder if maybe there are any swedish recipes that you could try because of the mass immigration of the 1800s. Swedish people came to America and I dont know super much about it. I have a relative who made some books about this but im just wondering if they brought any kind of recipes that are used in America even today that would be interesting to see. A good tip when making these is only use one hand for coating the patty in the egg and only the other hand for coating in the crumbs. That way your fingers don't develop e thick layer of batter and you can do the whole batch in one go without having to periodically clean your hands. Looking real tasty!

Looks like salmon croquettes to me. Have them all the time in the south. You can make them with tuna and apparently chicken. Mama called them salmon patties, but the original name was a croquette or patty of meat mixed with egg and binders then fried. Yummy for sure.

As always, thank you for taking the time to create and share your videos with us. It's much appreciated. I wanted to share with you what I was thinking about when I was thinking of you. You should write your own cookbook with Ron as your food photographer. Do your favorite recipes from all the famous people of your favorite time, but do it in today's cooking devices, time, temp & measurements on one page and then have the original on the opposite page. Of course if it's a small recipe you could just show an insert of a picture of the original recipe like you do when you show it in here. Girl, I've got all kinds of ideas. I would definitely buy your cookbook if it taught me how to do it in/on my conventional stove. I think you could do several series too. You've got all the footage in your past videos to do it in no time at all. Just saying, I think it could help with your household expenses and help get your house finished faster. There is nothing as satisfactory as tasting something from a good recipe - and wanting another taste! I know this from experience, and so did my mom. I remember my mom used to make chicken croquettes with a light colored gravy. They were good! Nowadays, I would put out mustard or a mayonnaise sauce to dip them in.

And a side note, my Mother sure would have appreciated having that colossal Wooden Spoon when she was raising me and my 3 brothers... We weren't afraid of being spanked with the little ones she had... That Big Spoon would have put the fear of God into us.
