Delicious, hot and fresh potato chips just like your 5x great grandma used to make. This recipe was sourced from The Virginia House-Wife (1824) however it was originally published in The Cook's Oracle (1817).

Anyone else here a cheap date? Just give me a potato and a book and I'm good. To Fry Sliced Potatoes (The Virginia House-Wife, 1824, Virginia) Potatoes Lard, for frying Salt to taste Peel your potatoes. Slice into thin disks about a quarter of an inch thick OR peel into thin shavings. On medium heat bring a pot of lard to temperature. Fry until golden and crispy, or around 10 minutes. Using a strainer, dump onto a cloth to soak up any excess grease. Sprinkle with salt. *The original reciept instructs us to peel the potatoes...but I find that to be a waste so I stubbornly ignored it. Peel away if you wish.

There's nothing to not love about fried potatoes...in any form. Add in MishMish on the roof, and today was a perfect video. Because it also brought back so many warm and wonderful memories of when my husband used to do Revolutionary War reenactments. The ladies and I used to fry many potatoes in lard, the thicker version, only we always rinsed and dried the slices first. Thank you, Justine! 🥰
