I've noticed this before, but it has never been as high stakes as it is with this recipe, but you do tend to leave too much air/empty space in your pudding cloths. Ie, when you tie it you let the cloth go a bit lax, meaning that water can get in. Try twisting it REALLY tight and making sure it stays tightly twisted while you the the string very, very tight. The knot should be located immediately above your filling: no space or extra cloth at all. I love your channel!

I was just about to post this. lol Not that I have ever cooked any traditional puddings. I learned this from an old English channel. It grossed me out how they boiled Everything. So it just kinda stuck with me that the pudding cloths have to be tight.

I wonder if the kind of rice they used back then for this recipe would have been different, i.e. stickier, than we use today. I'm thinking of Japanese onigiri, which uses a sticky rice. Would they have used a stickier kind of rice for this recipe than the long grain white rice we would think of today?

You should make snow cream. Simply add heavy cream and sugar to a large bowl of fresh snow. Add just enough cream to make an ice cream consistency. Add a little vanilla flavoring. So good!

Justine, I was going through a very old cookbook I have and I found a recipe for something called "Lincoln Snowballs". It is exactly what you were doing however, it calls for paring and coring 5-6 small apples then in individual cheesecloths, put a piece of apple in the center and fill the cavity with rice then draw the cloth closed making sure the apple slice is covered with rice. Tie the cloth then steam all of them until the apples are soft. It says to serve it with a soft custard or any desired pudding sauce. It said you could also substitute apricots or peaches. The cookbook is called Practical Cookery...it was written in 1945 by the Dept of Food and Nutrition at Kansas State College. I suspect from how it is written, it's a textbook for either a home economics course or a nursing course...there's a lot of information on how to feed someone sick or convalescing. I stumbled across this book at a Habitat for Humanity Restore...pretty sure you could find a copy on eBay or Amazon. Honestly, it doesn't sound like a very appetizing recipe and from your reaction, I think you would agree but I wanted to share this with you ❤

Love these videos. I have over 20 years of cooking experience. I love the learning blows life gives us. 😂 So i was reading the receipt and there's a part that says "tie them up close". The way you tied the cloth is way too lose. So in essence, the cloth is your mold, next time, roll it into an tight ball, nice and taught. You can double or triple the cloth.

Girl, lately, it seems I have failures or semi failures on a fairly regular basis! 😂 And sometimes, you know that you know you followed the directions. 🤷🏻♀️ Certain things, especially pastries, can be so finicky (like the dough not being cold enough when you bake it!) that you almost have to hold your mouth right! 😂 I get a laugh out of it, shrug my shoulders and get curious trying to solve the mystery and get excited to try again. Hehe! I love that you shared this with us. It’s fun to see other’s experiences. Even Julia Child had mishaps-she said that was just part of cooking, and she was right!! 🥰

One recipe I found online,said to place them in cold water. Bring to a boil and boil for the hour or so. Your water was already boiling when you added them. Maybe everything has to start out cold? 🤷♀️ Your pudding cloths were also steaming hot before assembling them.

Ron certainly knows which side his bread is buttered on. Bless him for being a good husband. Though it didn't turn out to be the snowballs that you had planned it reminded me a little of the apple rice pudding I often made for my kids. As we cooks know, not every recipe turns out well; sometimes the recipe just isn't right and sometimes the cook slips up somewhere. But honestly, that's why we have chickens and pigs. All mistakes gladly accepted by them! You look wonderful by the way.

I'm thinking that the bag needs to be tighter, leaving no gaps. Also, the recipe that calls for the apples to be cut small also calls for three egg yolks, which might help keep the balls tight. Next time it will be great!

Aww it made me so sad to see you tear up when the balls fell apart. It’s ok!!!! Who cares what it looks like as long as it tastes delicious and clearly your hubby thought it was amazing. We make cinnamon sugar rice for our kids all the time and it looks awful but tastes so good. I just know it will be a fond memory for my kids growing up. Remember, it’s the love and intention and not the presentation that matters.
