Today I'm going to try to recreate one of my favorite summer takeout meals for less. I'm making Thai spring rolls. This is so refreshing in summer and you can customize this for any tastes. This is naturally gluten free.

⭐️THAI PEANUT SAUCE
1/3 cup peanut butter
2 tbs low sodium Kikkoman soy sauce
1 tbs maple syrup or sugar
1-2 1/2 tsp rice vinegar (depending on how acidic you like it)
1 tsp sesame seeds
hot water to desired consistency - using this to thin out the peanut butter.
1 - 2 tsp sambal oelek or sub in red pepper flakes. If using red pepper flakes, use less.
*add in some lime juice to brighten the flavors.

Awesome, thanks for this great idea ❤ my mom uses boiling hot water and dips the rice wraps in just to wet it and takes out immediately (no soaking). She is Asian. Lol :) also, edited to add.... You can wrap the whole wrap individually in cling plastic wrap... To make a lot ahead of time, this keep them from sticking together and drying out.... Then eat whole if on the go, or cut to pieces.

Sambal Oelek is life. ♥️ I like to add mint, basil, and cilantro to my rolls, and I'm lucky I have a really good Asian store close by and all those things are cheap.

I love this meal! I dated a Vietnamese man years ago and we ate this all the time, but his sauce was a little different. He would mix peanut butter with coconut milk and hoisin sauce. Later I played with the recipe and started adding pepper flakes, soy, vinegar and/or lime juice. I also really like to use the peanut butter container when it’s at the very end because sometimes it’s a big chunk with natural and my immersion blender but he always made his warm on the stove. I also wanted to add that when wrapping the role try starting folding away from you and then fold in the sides because the sides then can cling to a piece of the rice paper and I think it’s much easier. Thx for another great recipe.

Too ironic! I love those too and I literally just made them last week at home. The man that made the sushi for our small vegetarian grocery store sadly passed away recently l, so I had to learn to make my own. Instead of a peanut sauce, he would include a sweet chili dipping sauce, which I’ve come to prefer. So amazed in the timing of this video and our similar taste!

Summer Roll is like Vietnamese' version of salad wraps, just made with rice paper and savory dipping sauce on the side. But yeah, the salad base is typically made with lettuce green, cucumber, and carrots. My family go with thai basil, mint, and/or cilantro (depending on what we have around the house). Protein wise, it either beef and onions grill/sauté in butter, or, boiled shrimp and pork belly. I feel that rice noodles are a bit redundant, but it mostly acts as a filler, and helps soak up more of that dipping sauce.

I made a version of pork belly wraps with sesame leaves last year. I also made a tofu version. That was really good too! I love all the herbs you mentioned...Thai basil, mint and cilantro in the wraps. So fresh tasting! I think in the first wraps I shared I made some with rice noodles and some with bean sprouts. I actually love both of those.

Thank you for this great idea! We have some mint plants that grow wild in the northern US. We have fresh mint in the summer and fall, and my brother-in-law dries it, and puts it in jars for the winter. You don't need a dehydrator or an oven to dry it. You can just hang the picked plants inside on strings, wherever it's most convenient. Once they have dried, you can start by taking the larger dried leaves and dropping them into glass jars, trying to keep the leaves intact as much as possible. Stuff that falls off or breaks can just be shoved into another glass jar of smaller bits of mint. They're great to use in many dishes where you would use fresh mint, like tabooli and teas. I think the plants we have are not exactly peppermint and not exactly spearmint, but some wild strain. But I imagine that whatever kind of mint plant you can get from a garden shop (or a neighbor) would dry as easily. Mint plants grow really wild, so we put them in an area where the spread of the plants into the yard can easily be controlled by the mower. I make a "medicinal" tea for my family of dried chamomile amd dried mint. If I don't have our homegrown mint, boughten dried spearmint from the spice shop is also great. 2 to 3 teaspoons of dried chamomile flowers and .5 to .75 teaspoons of crushed dried spearmint in 4 or 5 cups of boiling water. I usually add more water to my serving and for children. Diluted, it makes a great iced summer drink. Some of my family like it sweetened, and some not. I started making it when someone was sick, but now it is also just a healthy beverage my family enjoys. And a pitcher in the fridge is a welcome sight on a hot summer day!

Hi Michelle. I make these all of the time in summer. Sweet chilli diping sauce, cheap from any local Asian store is what I use. Favourite ingredients for mine are.... Iceberg lettuce, carrot, cucumber, Avocado, mint, rice or mung bean noodles, cooked tofu. So cheap, so good, so nutritious.😊

Lol ypu have so kuch asian knowledge. From the huy fong products like the exceptional sambal olek to hoisin and rice paper. I feel like you ised to be married to an Asian lol. There are these neat little rice paper werrwr things now. Its like a plastic half circle slit about 1/4 inch wide and you hold the rice paper on its edge standing up and you fill the slit with water and you dunk it in and it obly fits half the circle so you spin the paper like a wheel in the water and take ot put whennits still a little hard and the residual water will soak in. Neat invention i didnt have when i was younger ita GENIUS

I tried salad rolls in restaurants and I was hoping to make some myself, especially during covid, so I bought a package of rice paper wrappers but did not get around to trying them. I love peanut sauce too. So, now is the time to try making it :) Thank you for another inspiring episode :)

I am so glad that you took the time to do this video, I moved to a new area 3 years ago and cannot get my favorite spring rolls. I really miss them and now I will be able to make my own in the version my favorite restaurant makes them that is over 7 hours away.

This was so fun to see! I love spring rolls and sushi. Oh and Poke bowls. Stuff like that. Such a heavy hit to the wallet when the craving strikes. Yet truly so much cheaper made at home. Been a long time since I have made any of that for myself. Going to rectify that pronto as I feel the hankering building. Feeling inspired now, thanks! And congrats on your new schedule. I liked 4 x 10s, hope you do too! Trade off is that those days are pretty much eaten up, but having the full extra day is just also really nice.

I’ve been making a tossed salad like this since I can no longer have the wraps. I use the peanut sauce with a squeeze of lime as the dressing and it’s amazing! I air fry the tofu until crispy and watch out it’s a party!

One of my favorite additions to spring rolls is mango. I also like to add basil along with the mint. For protein I like to add cooked chicken and/or finely chopped nuts. Can't eat soy products, but tofu would be good or edamame. Thanks for reminding me of this meal that I sometimes forget about. Peanut sauce is a must!

I personally love the recipe for peanut dipping sauce by Chef John of Foodwishes. The combo of lime, coconut milk, peanut butter, and brown sugar is just out of this world good - I could drink it! Its also good on noodles. Peanut dipping sauce- by Chef John ¾ cup smooth natural peanut butter 2 cloves garlic, minced 2 tablespoons brown sugar 1 tablespoon fish sauce 2 teaspoons soy sauce 2 teaspoons toasted sesame oil ½ lime, juiced 1 teaspoon Sriracha, or to taste 1 (5.6 ounce) can coconut milk 2 teaspoons chopped red bell pepper, or to taste 2 teaspoons chopped fresh cilantro, or to taste 2 teaspoons chopped peanuts, or to taste

I have always wanted to try to make salad rolls, but I fear working with the rice paper. Your video showing how you worked to rehydrate them and rolling them almost makes me brave enough to try it! The peanut sauce I can make in my sleep because thanks to a former coworker I have a great recipe I use all the time.

I sent you the recipe for my prize winning 7 Chillies Chili. 🌶️ 🥵 The peanut sauce recipe my friend gave me has 4 ingredients (1/2 c peanut butter, 1/3 c hot water, 2 Tbsp Hoisin Sauce, 2 tsp Heinz chili sauce - the one from the ketchup aisle). I add touch of sesame oil and hot chilli oil or Cholula (which I prefer to Sriracha).

I saw a video where someone put three wrappers together in a sort of Mickey Mouse shape then did the fillings and it makes a very large roll. I’ve done it twice and it’s great!

Hi Michelle, that looks delicious! I love veggie rolls. And the sauces are good too. Have you ever made Vietnamese street pizza? It uses rice wrappers like the smaller kind you have. Emmymade made them a few years ago on her channel. You can still find what she made in her Playlist. Anyhow, there are lots of recipes online of Vietnamese street pizzas. Many of the recipes have some variations from each other. It does call for quail eggs, but I used a chicken egg and that worked just fine. I made 2 of them and used half an egg for each one. It also calls for sausage so I used a vegan sausage. It also uses kewpie mayonnaise. Dollar Tree Dinners posted today and she gave a shout out to you and four other budget conscious cooks. She also posted links to your channels in her description box. I thought you would like to know.

I live in a country across the pond (South Africa 🇿🇦), so the prices per meal aren’t relevant to me, BUT, they’re definitely similar and useful 🤑 I like how you stick to the healthy side of cheap meals 🥘 I find that cheap often falls into the unhealthy category on some channels.

@@nicolebell-m1y I eat mostly a vegetarian style diet but cook some meat dishes on this channel. For the extreme budgets, obviously no meat in those. As for my voice, I use a Blue Yeti microphone and do voice overs.

I've seen the spring roll wraps at Grocery Outlet for around 1.50. Thanks for your demo on making the refreshing spring rolls. Looking for success next time i make them 😊. I cant have peanut butter but maybe almond butter to replace ? Michelle ,if you thought about doing a series using items that are distributed at your local food pantry ( you may have them already at home) and than what you would purchase to supplement, round out meals for maybe a week. I think there are a number of folks that go to pantries and then with very limited funds try to round out thier meal plans.

@@ArdentMichelle that would be awesome ! I used to work at an inpatient crisis clinic . Many were homeless and we would try to get them services established as well as stabilizing thier mental health. I remember taking them to food pantries and giving suggestions on how to best utilize food , resources. I was an LPN case manager.

I found the ingredient list on the package for the Whole foods spring rolls. Peanut Sauce: Peanut Butter [Roasted Peanuts, Sea Salt] Sweet Chili Sauce [Water, Sugar, Red Chili, Corn Starch, Turnip, Carrot, Garlic, Salt, Acetic Acid, Citric Acid, Xanthan Gum] Chinese Dressing [Blended Vinegar (Distilled Vinegar, Rice Vinegar, Salt) Sugar Soy Sauce (Water, Soybeans, Salt, Wheat Flour) Sesame Oil, Onion Ginger It looks like they are basically mixing peanut butter with a fairly large amount of sweet chili sauce (that apricot-colored thickened sauce), some vinegar (what is in that "Chinese dressing"), and you can see the rest. Perhaps try that and see if it gets you closer to what you are getting from Whole Foods. I would probably just use onion powder, because I imagine they are making huge batches of this sauce, and the amount of real onion ends up being quite small in the final product.

Looks good I think I’d like to try that for my husband instead of a salad. He’s kind of low-carb, but that rice wrap doesn’t look like much of anything to worry about.

the Dynasty regular size rice paper that I have has 6.5 grams of carbs per sheet. Not sure if there are some lower carb versions out there.... but this is fairly low and falls under low carb...unless he's doing keto.

Put them in the fridge. It will lower the glycemic level. Similarly, if you freeze your bread it lowers the glycemic level.

I love making these! I bet the acid note you were missing was the lime juice. Vinegar works though! How did you shred your carrots that thickness? Just with a hand grater? They look just like the pickled shreds from Vietnamese places that have a square cross section. Mine seem to come out flat like salad shreds when I try. I love to marinade my tofu and either pan fry or roast them before adding to the rolls and I put some of the dip inside the roll which is not traditional but so yummy

Yum yum yummie 😋! I made these last yr and was pretty nervous, but it wasnt too bad! Need to get the wrapping paper. Think High Carb Hannah used to make a sauce of maple syrup and mustard and another of maple syrup w peanut butter 😊. Plantiful Kiki has some great sauces too, esp ranch! Thx for showing us this. Luv luv ❤️ spring rolls 💓 and will even eat for a later breakfast ha! 😂

Have you seen those sushi counters at stater bros and Ralph's and other grocers that are like the whole foods one? I think one is afc foods and there are other companies. Sam's has one in the back that they make fresh for the store. Anyway I bet the other grocery stores are cheaper than Whole Paychecks. You know what, I bet they put in their peanut sauce to make it that much more umami? Fish sauce. Instead of adding extra soy sauce finish with fish sauce. It's strong on its own like soy sauce is. Actually stronger. But in the sauce like with soy sauce, the flavor disappears but the umami is what makes the sauce.

I’ve tried everything to make a peanut sauce like the one I get in my local Chinese restaurant. It just doesn’t work as well. Some things are just hard to recreate. These rolls look amazing and so much better value.

Good morning Michelle, This looks really good, I love this kind of food, and of course I love peanut sauce. I'm glad you mentioned the brand of peanut sauce because I have bought some that I threw away because it was so bad and me trying to help it made it worse. I will make your homemade version too, but it's nice to have one to just grab and not make it. Thanks for the idea, it's been hot here too, and don't want to cook. Charlotte

Interesting.....I love it. But I always have it loaded up with crunchy vegetables. Make sure to let it sit before you eat it, otherwise it will be wet and slimy. 😂

INDIAN NATIVE AMERICAN RECIPE CHIPPEWA INDIAN FRY BREAD Serves: Prep time: Cook time: Dry ingredients: Mix: 2 1/2 cups flour 1 1/2 Tbsp. baking powder 1 tsp. salt Liquid ingredients: Mix: 3/4 cip warm water 1 Tbsp. dry milk 1 Tbsp oil Combine liquid and dry ingredients, stirring 'til smooth. Knead 4 to 5 times. Let rest 10 minutes. Form into 8 balls: flatten to 8 to 10 inch rounds. Make a hole in the center of each round (the legend is that the hole is put in the center of the bread to let the evil sprits out) Lightly flour each round and stack and cover. Heat 1 inch of oil in skillet . Cook one at a time for 1 to 2 minutes on each side. Drain on paper towel or rack. We like to brown ground beef or sausage and onion and put on top and top with cut-up tomatoes and lettuce. For sweet you can sprinkle with cinnamon and sugar! Right now I'm doing 9 hour work days + a half hour for lunch with a flex day off every other week. I do think that the 4 10s will be better for my channel but since I start earlier, I'm hoping I can still get in some editing and exercise in the mornings before work.... I did NOT take down my other channel. I'll still occasionally upload individual recipes to my channel so that they are easier to find by my viewers. Hoping the new schedule will help me to be more consistent with that and also with Instagram and Facebook.

I don't ever do anything to the tofu. We like it plain because it's gonna take on the flavor of the sauce that you dip it in. Just make sure it is drained well with all the water squeezed out of it. That was so nice of her to mention my channel. 😁 I've always liked the style of her videos.

Great video! I have a peanut sauce recipe that calls for lime juice and it's so good! I keep the lime juice bottles on hand. I picked up a tip from Healthy vegan mama on KZbin about using powdered peanut butter in recipes to save calories and fat, and I am going to try it in the peanut sauce. I have used it when I have peanut butter with bananas or apples and I use half real peanut butter and half peanut butter powder (reconstituted with water). I actually prefer the lighter taste and it is not so "thick." Walmart has a Great Value brand of the powdered peanut butter that is less expensive than the name brand.

@@ArdentMichelle I didn't but here is the recipe! : 1/4 cup peanut butter, 1/4 cup almond milk, 1 T + 1 tsp soy sauce, 1T + 1 tsp maple syrup, splash of lime juice or rice vinegar (I've only tried the lime juice), 1 tsp minced ginger and an optional pinch of red pepper flakes. I have used 2 T Coconut aminos in place of the combo of the soy sauce and maple syrup and it gives good flavor and is sweet enough. I also like to add a little more ginger and I do add the red pepper flakes! You could probably use dried ginger but the fresh minced is far superior. I am going to try using the half peanut butter powder/peanut butter mix that I mentioned when I make this recipe next time. And of course you can double this recipe to make more. 🙂

oh my gosh you're right!! I see it has pineapple juice in it.....🤔 I don't recall that taste...but I wonder if it's possible it was masked by the other ingredients somehow. I think I need to try this...because it WAS quite sweet....maybe that's why. The pic of this looks kind of a lighter color and the actual one has an orange tint to it. We need someone that works there to give us the inside scoop. I'll try to pick up some pineapple juice today though. Thanks for sharing this.

@@ArdentMichelle hmmm. The recipe I found has no pineapple juice. It has tamari, oil, peanut butter, mustard, vinegar, ginger, honey, chile flakes and 3 tablespoons water. It’s Vietnamese spring rolls and peanut sauce

Since I have recently discovered your channel, I am in the process of catching up with your old videos. In one video in particular, you were shopping in Wholesale Foods (or Wholesale Market) and briefly spoke about a product which I think was a fruit. Unfortunately I didn't catch the name of it, even though you mentioned it. You said it tasted like a date and that it was good with a cup of coffee and that it looks like an apple. I am intrigued by this and would like to search for it on line. So I wonder if you could elaborate on this and perhaps send a brief reply. Thank You and I love your content!
