Today in the shop we are making a K-Tip Gyuto, or Kiritsuke. This is the Japanese version of a western chef knife, and it's also the second culinary knife I have ever made.
The idea for my over all design is based on the Journey knife, and its geometric shape, paired with a natural organic handle. To see that video, follow the link below.

I started with a piece of 1/4" x 2" 1084, which I forged out in the new Sadie Smithy, tapering it to a point first, and then drawing the heal and blade down to get the 2 1/2" height on the blade that I wanted for the design. When the forging was finished, we took it in the shop and profiled it to its final shape with the angle grinder and 2x72. I rough ground the bevels, and heat treated it before moving on to finish grinding down to a Scotch Bright belt finish. I fit up, glued, and pinned the Buffalo Horn with stainless pins. Then I profiled and shaped the handle with a 45 degree bevel on all sides, and worked the horn up to a nice polish on the 2x72 first, and then finished with hand-sanding and buffing with black compound. We finished up with a sharpen, and gave it its first taste of cutting on some tomatoes and a cold cut for lunch.
We built this knife as part of a friendly knife making challenge with a super talented group of 9 other KZbin content creators, who all made their own versions of a Guyto Knife. Things that I really enjoyed about this video: small square anvil use of horn for scales. angular scale geometry solid use of protective gear adorable mini polishing belt"grinder" And 1 pet peeve. No mirror polish on the blade. 10/10

You never want to be beating your pins in that hard. All it does is cause problems. You can put the pins in a drill and sand them as they spin or wrap sandpaper around a smaller drill bit and sand the inside of the holes. Very sweet knife though! 👊🏼

Dude. Love your work. I started stock removal 6 months ago... I have learned tons from you over the past 6 months. Since watching your channel i have refinished 2 axes and made 7 knives, and 4 leather sheaths. You are a big inspiration. I like that you use 1084... doable for the average guy. I will be using this as inspiration for my next project

I noticed the blow out when you drove the pins on glue up. How did you clean it up without burning out the material. (I have started tapering the ends of my pins more to prevent this)

Thanks Aaron for the love. I’m always happy to hear when my work can inspire someone to try new projects. As far as the blow out, I did taper the pins, but it still caught the “fragil” horn on the way out. Fortunately, I accounted for this with the thickness of the scales, and was able to grind the chip out away when thinning the handle some after glue up.

10 superb gyuto knives! 🤩 Congratulations to the 10 participants and I hope this is only the first collaboration of a long series. 😍 I was able to enjoy seeing the blades making, from, at first glance, simple to complex and all would have their place in my kitchen ... except, maybe, the Faraway Forge one, my kitchen is too small 🤣

When done using a spray paint can, if you flip it upside down and spray it, it should run clear and clear the nozzle for you. Some of the new cans don’t work though because they have a new spray any angle design.

What’s up buddy, I have watched this build so many times to learn how to make my first chef knife and just wanted to say thanks for it because I made my mother a really nice gyoto and it turn Sex out amazing! Also, wanted to ask what is that anvil from the big block looking one? I need a good something for striking on and I was just curious?? I am not a blacksmith; I don't even play one after staying at a Holiday Inn.....but, it seems to me that you need to reverse your equipment. You are right handed and therefor you use your left hand to hold the material.....I think you need to put your forge on the other side of the area. That way you don't have to rotate your body over 180 degrees to use the anvil. Take it from an old man that worked on a dairy farm; and now has to suffer from a "bad back". Ergonomics can be your friend.

Hello, awesome chef knife man!! I hope to get my skills to that level to make decent chef knives ect. Right now I’m just doing bush knives and file knives since just starting! Anyways what is the anvil or what is it a piece of that you first started on in this video? The block looking thing? I’m trying to find a decent anvil or something that won’t break the bank too badly! Lol any help would be greatly appreciated. Thanks again and keep up the great work/videos

I will start off by saying, I love your videos! That being said, I’m not sure if this was a forging competition or a knife making competition…. I know that your not a knife smith by trade, so all in all I like your knife design and it looks amazing. I do however enjoy seeing/forging knives to shape instead of stock removal, which except for the heel, that’s what this was…. Just a bit of healthy criticism…. Not wanting to start any drama with anyone tho…. Again, I love your videos!

Hey Billy, thanks for the feed back. We were free to make the knives however we chose, and I wanted to do a combination of both forging and shaping with grinders, which worked for the stock I had to start with😉. I totally agree, and also really enjoy watching smiths forge to shape. I’m still practicing.

I thought the challenge was to forge a knife, not a blank. If there's ever an angle grinder challenge your there.

Very nice knife! I watched the other vids but voted for yours. I am unimpressed with most of the fancy equipment the others use (the one exception being the induction forge, that was cool!). Keep up the good work!

I'm not the expert that Dustin is but - He started with 1/4" x 2" 1084 and moved the metal to fit his geometry hence the blacksmithing. The blank was much to narrow and to thick for his finished profile.

Pleeeaaase tune up?! I really like this channel but I have just unsubscribed because I can't listen to that out of tune guitar. I am not kidding, it makes my skin crawl. It may be because I play the guitar myself or maybe I am just overly sensitive, but pleeeaaaase 🙏 Do something
