Thanks for the tutorial on how to grind correct. Is there a way to fix a ground knife that is off center? I have a knife I like the overall length and weight of but when cutting it pulls to my left when cutting down. It it is a 11'' kitchen/butcher style knife. Ive been running a steel along the blade on the left side blade down side for weeks with no change in cutting results.

Man I'm not sure. One thing you can do to verify if the edge is in the center is to lay the blade flat down on a precision ground block (3-2-1 block would be prefect). Then measure the distance from the table to your edge... then flip. This will tell you if your edge is in the middle of the blade. A height scribe and granite surface plate would make this easy. Other than that fixing it, I think, would be difficult.

This is probably a silly question, but do you actually measure center with micrometer or just eyeball?

No one ever says how you get the right distance on the scribe...how do you get it perfectly down the middle..use a micrometer?

You scribe both sides of the blade and create 2 parallel lines. It's not perfectly in the center. To set it up initially I just eyeball it.

well you can use trial and error to adjust the distance of the scribe. What I normally do is scribe both sides and get 2 parallel lines. Normally around 0.020'' apart or so
