Thanks! So glad you're liking my vids. You know I'm glad you brought this up, I was looking at the footage from the full episode I did on the chicken and I think I may have added more liquid in that version of the recipe. It just looks "juicer." Unfortunately that was before I started to weigh out my ingredients.... so you could probably get away with more liquid if you're going to make the chicken on it's own. Possibly up to 100-300g more stock. I'll test it next time I make it and report back, and if you (or someone who reads this comment) tries it out before I do, I'd be curious to hear the results. The chicken really soaked up the liquid in the pie while it baked. You can see the difference in the filling from before I put the crust on vs when I cut into it after the bake. More hydration in the initial mix would maybe stop that from happening.

I haven't perfected it, but I have noticed that when you use the IP on this, the seitan soaks up more liquid then if you simmer it, just FYI!

Yeah! I'd shred it before you freeze, though, that is just a hunch, I've always eaten it all up after making. I feel like the grain would be different after freezing and thawing.

Thanks, and for sure. You could easily buy the frozen stuff and pop that in at the end. You might even be able to find a vegan pie crust if you're lucky depending on where you live.

Is this pan cast iron? Has it any type of coating? I was thinking about getting small cast iron cocottes and was wondering if I could prepare dishes like this in them

Yup - just a regular ol' cast iron pan, no coating (besides the seasoning I've added over the years). I've been using this specific one almost daily for over a decade and love it. Was just a cheapo one. Has outlasted all of my other cookware haha.

I clean it with a normal sponge and soap/water. If there are bits stuck to it, I'll boil some water in it to loosen the bits and then scrub again. Once clean to finish, I get it hot on the range to dry it out completely and add a dab of oil to re-season the pan.

Well... admittedly I've tried many homemade pie crusts and liked NONE 🥺... as a 54 yr old Grandmother 👵... I've admitted delete in finding my erfectly flaky slightly sweet Pie Crust... However ☝️... this one seems hopeful and I'm willing to try again... but I do want to use Butter Flavor Crisco, which is Vegan,.. so says Goodle anyway lol. . I think it will lend a nice flavor combined w your technique... looks delish.. I could use a good Chikun Pot Pie recipe. Thanks for Sharing 😙👌

I used plain crisco in this, and it worked really well. You could maybe try mixing like 75/25 crisco/vegan butter to infuse that flavor! I hope the recipe works out for you if you try!

Yeah! I love making something like this from scratch as I end up learning multiple different techniques and put those in my tool box for later. Also nice to test the limits of existing recipes, like the shredded chick'n.

No offense I respect your lifestyle choices, but one thing I’ll never get is why vegan food mimics meat at all. Like isn’t it weird to y’all to eat something that you know is supposed to taste like meat and look like meat? Why make replications of something you don’t want to eat.
