My seitan comes out rubbery. I went online, and a site said that it was over-kneaded, and yet I had hardly kneaded it at all! So it can't be that. Any ideas?

I tried to follow this recipe as close as possible. My only big mistake was not using enough food coloring, so the end result was pretty grey. BUT the texture and taste were great. PS instead of slow cooking for 4 hours, I put this in my InstaPot to preasure cook on high for 2 hours, with natural venting. Came out great.

Vegans go vegan for the animals, not because they hate the taste of meat. I never get this question anyway. Why go on roller coasters, then? Why not just drive off a cliff instead? Why eat spicy food when it's basically just pain and not a flavor? Why go to the movies instead of watching movies at home? Why dress up in costumes for Halloween when the costumes aren't real? Why do grocery stores sell non-alcoholic alcohol? Humans do human things.

May I ask a question? Ok great. Well, what if you grate that vegan havarti cheese that you preferred, THEN put it in a processor to get it to melt finer, and THEN add a bit of oil on top of it all. Have you tried that method? I'm thinking you might like that one the most.
