As a small batch guy that uses the 6.5, I knew where this was heading as soon as you said "5 gallon batch"! 😆 I use 3 gallon kegs, so I brew 3.5 gallons to get a full keg out of my brew day. The 6.5 struggles sometimes with that amount, but it works out for me. Great video! Thanks for sharing your brew day!

Glad you upload these complicated brewdays and put in all your mistakes. I believe almost every brewer can relate. Stuck mashes are what led me to start condition my grain before milling. I've gotten way better flow and a nice efficiency bump. It's a bit extra work, but I can highly recommend.

I’m seriously thinking about scaling down my brewery. I like the idea of smaller batches. I’m just not drinking as much as I use to. Yeah, rice hauls have helped me out with the anvil. I’ve had a few stuck mashes. Cool first person point of view brew day:)

I love Hefeweizen and of course Dunkelweizen! Luckily I don't have to brew them, living in Franconia and being surrounded by a good amount of breweries that make the style. I do stuggle with Tri Clamps too sometimes, but that'll get better over time. If you're having some capacity issues with mashing, I leave a little bit of water out and add it a bit later, once the grains are soaked or even do a little sparge.

Great video, I just made a Dunkle Weizen too except mine was a partial mash with wheat DME. Just trying something different and it turned out great.

Very nice even with several obstacles you had a nice beer at the end! I love my anvil, 6.5 I do 3 gallon batches have never tried a 5 gallon batch. Keep up the great videos!

Had fun tagging along for your brew day, even though it didn't go according to plan. Definitely have had brew days that go like this. Sometimes that's just the way it goes when it comes to homebrew, eh? 😃 I've found that with my Anvil Foundry you either have to use rice hulls or do a mash out at 170F for 10min to avoid a stuck mash. Maybe both when doing a brew day with huskless grains like rye. Glad the beer turned out good in the end at least. Cheers! 🍻

Next time you use that strain try underpitching and open ferment until high krausen starts to fall, then airlock it. Esters will be super intense.

@@ElementaryBrewingCo I was always afraid to, until my brewing classes in college forced me to give it a shot. The amount of banana esters jumping out of that bucket (all I had back then) was amazing.

If that will ever happen to me, I won't bother wasting hops and yeast, I would just throw the wort in the drain and start over again, grains are cheap enough 😊

I find things get a bit gummy/sticky when I do a protein rest in an all-in-one system... Prefer to skip this step completely to avoid the dreaded stuck mash

Super happy to see that you show some of your mistakes. Brewing is not always sunshine and rainbows. Things go wrong and thats fine. It is how you deal with it keen to hear more tricks on what to do when things do not go as planned. Also really digging the POV and the voice over. What do you generally do with a fermentation that is not as low as you expect it? I had a beer that finished around 1020 the other day (it was in the fermentor for 3 weeks at 20C). Do you shake it? Do you raise the temp? Pitch more yeast? I guess it depends on the situation of how it got there.

Thanks!!! I did try raising the temp on this one but didn’t seem to help. There was still a bunch of yeast in suspension when I was pulling samples so I’m attributing the higher FG to the problem I had with the mash and lower efficiency. Cheers 🍻

Hey mate, Proceed doing a great job. I've cooked Dunkel Weizen recently with 1 boiled portion outside the mash. It was an amazing taste. Notes of cherry, honey, etc. But without banana How did you get the banana note?) Thanks

Love the character you get from a decotion mash! I used Imperial Yeast Stefon and got a good mix of banana and clove with a cooler start to fermentation, 66 F. I’ve also heard that you can get more banana by open fermenting at the beginning, which is something I’d like to try with this style! Cheers 🍻

I’m curious in your opinion why is the Clawhammer better than the Anvil?

I don’t really think either is better than the other. Just depends on your set up and preference. My anvil is smaller so works great for 2-3 gallon batches and cleans up super easy! The Clawhammer is a 20 gallon so I’ve got more room for 5-10 gallon batches and it’s a 240v so it’s way quicker. But I honestly use them both pretty equally and enjoy each of them for different reasons. I guess all that matters is what you’re going to use it for primarily and budget. I’m lucky I can have both, cheers 🍻

My original plan was to brew a concentrated wort so I could top up with cold water to make my chill time quicker. In hindsight I really should have used the Clawhammer! Cheers 🍻
