I have been looking for a canning recipe for rotel forever! I use it by the case for everything. Just a hint, if you will steam your chille's, in a paper bag, or a bowl covered with plastic wrap or even a glass bowl with a cover, they will peel much easier for you even after they are frozen.

Your home canned Rotel looks so yummy Ms. Vickie. I was born in NM, and I have eaten a lot of Hatch Green Chili. It is the best in my opinion. Thanks for sharing with us. You all stay safe and well. God Bless You Both.

Great recipe. I just have to get a pressure canner! What was I thinking to get rid of mine when I turned 60 and moved from our little farm? I'm retired, have been through many hobbies, and find myself still in love with preserving food. So I'm gardening again, dehydrating, water bathing, but no pressure canning. Oh well.My birthday is coming up and hopefully, someone gets the hint. LOL

Oh I love being able to make from scratch. I've never pressure canned so I am watching very closely. So from what I could see, no water was in the canner but I know there had to be?? Also, I love,love your apron. Can you share?? Thanks for all your sharing....

Yes! You always add water to the canner, and if heating hot jars, use hot water. The amount depends on your pressure canner, so be sure to follow the instructions. Mine usually uses 3 quarts (or 3 inches before adding the jars). I have a friend that has made me a number of aprons that I love!

Lol! I wondered if anyone would ask. These two cats are five year old brothers that were surrendered to the shelter because of the owner’s health. Then they were in the shelter several days, so they were pretty traumatized. We knew it might take time to settle in, especially with new dogs, so we put them in a bedroom with a doggie gate. They could come out, but the dogs couldn’t go in. We didn’t see them for 2 weeks, but we have a game cam, so we knew they were out at night. I would go in the room, sit, talk to them, and even watched YOUR videos in there. So, my theory is that when I am filming videos, they think I am talking to them, since usually no one else is around!

Ms Vickie, can one use plain iodized salt instead of canning salt? Also can frozen peppers be roasted or can my frozen used without peeling? I too have several bags of tomatoes and peppers that need to be used. Hatch peppers are delicious...do you save seeds or grow them? Id like to grow some. Ive been to hatch NM 30+years ago..

I believe you could use iodized salt. I like canning salt best for this because it has no additives. I would check the peppers to see how thick the skins are. Mine were pretty thick, and I wouldn’t like to have them in the finished product. The same with tomatoes. If you are going to very finely chop, they might be ok. I haven’t saved any of the seeds, but I might buy some this year. I have never been to Hatch, but I sure do love those peppers!

Thanks for the video. I tried Rotel a few years back but mine just didn't have the flavor I was looking for but after watching this I'm sure I will be trying this again this summer. Did you grow your own Hatch chili's? I went to Hatch NM, about ten years ago and would love to go back. I'm in southern Illinois and I don't find those good chili plants here in the Spring.

You are welcome! The original recipe that I used didn’t taste right either, so I went and looked at the ingredients on the can. It really is pretty simple, and it definitely doesn’t use sugar! No, we are able to buy Hatch chiles locally for a short time each year. I usually try to buy a few, roast them, then freeze to have on hand.

A lot of the chili peppers have tough skins. If you don’t peel, you will find tough skins in the final product.

Vicki, I have a canning question. I have several 28 ounce cans of Cento crushed tomatoes and I want to make pizza sauce with it and can it. Do I need to add lemon juice to it before doing a water bath? Help please..........advice? words of wisdom? LOL thanks

Well, I know you can use canned tomatoes to can into other products, and they might have had acid added, but for safety’s sake, I would add either lemon juice or citric acid. Especially since there will likely be low acid ingredients in the pizza sauce.

Do you get the pressure gage up to 15 lbs and add a 15 lb weight while canning?

I let the canner vent for 10 minutes (it will show a little pressure on the gauge), then put the 15 lb weight on, and let it come up to 15 lbs of pressure. Then I stay close by until it is finished to make sure the pressure doesn’t go up or down.
