My sister got a great deal on a pressure canner, and is finally ready for me to teach her how to use it to can meats. So, here is the canning process, along with some very good questions from her. I hope you enjoy, and watch until the end, because that is when we have the questions and answers
Together we canned 21 pints of chicken thighs in broth, and 9 pints of hamburger in broth. She now has a good start on her pantry..
Note: At this time, summer 2020, canning supplies are in short supply, so be persistent when searching for them. Check online daily, and watch social media marketplaces - you never know when you will find a great deal!

My momma is visiting and brought her entire canning set up to teach me some canning. It was my first time pressure canning. We did ground beef, taco meat, and bacon. I can't wait to get my own canner!

I can’t tell you how much I appreciate your videos and you’re knowledge. This is the push I needed. I’ve been so stressed to have my All American in a box for almost two years bc I’m totally intimidated by it. I’ve done quite a bit of water bath canning before and I have very fond memories of my mom canning jams. Because of your videos I feel like I’m completely ready to tackle the beast! 😊. I’m starting with green beans after my test run. Say a prayer for me.❤️

Just to clarify! I have a Presto that is safe for glass top stove and it is both weighted and gauged. I would highly recommend using weighted canners! There will be no doubting the accuracy of your pressure. Great video!!!

I really enjoyed seeing the two of you working together... I wish I could do these things with my sister... we waited too long and so even though she is younger than I am, she isn't up to it anymore... I will be 75 in a few days but I am starting all over to do canning after about 35 years of not doing it... I am all alone now, but I want to create a little pantry full of my own home-canned goodies now... so, as long as I am able to, why not?

Alright friends, I am putting out a call for one of my subscribers in the Auburn, CA area. She needs a canner and supplies, but none seem to be available. Her canners and supplies were taken after her husband passed away. Is there anyone out there that can share, or sell at a fair price?

Vickie's Country Home canning supplies are low here too which surprised me as it's more and american thing, but i do know that some country ladies can here for convenience as they live a long way to the shops, i just didn't expect it to be hard to buys canning supplies here though. Covid had given people the time & inclination to can. I hope your friend has some luck!

@@hopelovefaith1321 one of the few good things to come from covid in my opinion...that more people are either canning again or learning to can. I just hope they keep it up, after the scare. In South Louisiana here, we are still in phase 2...so our shelves are just not back to "normal" in anything. Then we just had hurricane Laura blow thru here as a Cat 4 hurricane, so that hasn't helped matters any...our shelves are still very bare looking. I lost all my fridge & freezer foods due to no electricity for a week but thankful I still have my pantry full of canned foods.

I save the used lids because we freeze food and broth in the jars as well and you don`t need secure seals for that.

I don’t freeze a lot, being off grid, but I do reuse them for vacuum sealed jars, and they usually work well. I just won’t reuse them for any type of canning.

Now presto has a weighted gage as well. It has 5, 10, or 15 psi choices. Now they also make a smaller canner made exclusively for Walmart with only a weight of 5, 10 and 15 but psi choices but no gage.

I ike my 60's presto canners. I have 2 of them. One was my grams. The other I bought at a yard sale. I have been canning in my grams for 42 years. The other for 25 years or so. I like the pressure gauge. Can't stand the sound of that jiggler. It makes me a nervous wreck. I usually use both canners at the same time. Sometimes with the same thing in each for large amounts. But alot of the time, 2 different things. If I'm watching one canner I might as well watch two. I take my canners lids in at the beginning of each year I start to can. Our local hardware store can check our gauges. This year both needed replaced. That happens. I also have them check it mid canning season if I'm doing alot of canning. Like over 3 months or so. And I never leave my canners when they are going. Getting ready to can spaghetti sauce today. Out of my own homegrown tomatoes. Also need to can more of our potatoes. Love them canned. Can on everyone!

That is so wonderful! My mother didn’t can, so I didn’t learn until later, and I had to buy everything I needed. I am completely the opposite. I don’t feel like I can get away from the gauges, especially being off grid, using propane for cooking. I never seem to have exactly the same sweet spot for the canners, so the weights give me the freedom to move around the kitchen and work on other things at the same time. I only know of one local hardware store that carries replacement parts for canners, and I haven’t heard of them testing the guages. I’m going to have to check on that, but our county extension just doesn’t make it easy, especially when you work too. Keep up the great work!

How can I help you? If you are new to pressure canning, you might try “canning” some jars of water. They can be kept in case of emergency (sterilized water), and it is a good way to try out pressure canning without risking food.

I can't believe I have to replace all of my much loved canning supplies, including my big pressure canner. When my husband passed away, I didn't know that people were helping themselves to everything in our garage & fruit room. I've had to move & most everything has been in storage. I went to count my jars & find my canner's, I had 3, & found nothing. Lot's of empty boxes, & not a single canner or accessory. I just looked on Amazon & still am in shock. Do any of the dedicated canner's out there have any suggestions? I'm heartsick over this.

I love your videos, you always explain so that us newbies can understand. I have never canned but am considering it. I have been looking at a Presto 16 quart. However, it does not have the gauge just the weight. As a new canner will this cause me problems? I would be at 5lbs of pressure for my area. Any and all advice would be very welcomed. Thank you. My Presto has a gauge, but I have weights that can be swapped out. I have used both, but to me weights are easier because I can listen for the jiggling while I do other things.

My mother always canned the old fashion way in yard with fire and huge tub we canned all our green beans and everything this way she would boil for 4 hours is the water bath a safe way to still can?

It is not recommended as safe for low acid vegetables and meats, although some people still do.

Why do you par cook with broth instead of raw pack? Is it just personal preference?

I do sometimes raw pack, but I have found that I like the texture of the chicken better when I par cook and add broth. Raw pack chunks tend to shred very easily, which is good for some things. But I do like chunks in some recipes.

Plus with hot pack (par cook) you have the opportunity to remove more excess fat. Gives the opportunity to make a lot of broth, especially bone broth using the bones after the meat has been removed. Slow cooked for hours to extract nutrition from the bone and marrow. Even better if the skin is on when the meat is purchased. There's nutrition in the skin, as it is within the bone and meat scraps that are with the meat chunks to be canned. After preparing the broth, chill broth to remove fat*. Strain to remove solids. Use part for the canning liquid for the meat. Rest can be canned for future use. Often raw pack meats tend to turn dark or grey above the liquid in the jar. May or may not be an issue depending on how the cooked meat is used in recipes. * BTW, the fats can be utilized. Pork render the lard. Beef - render the tallow. Chicken - make schmaltz.

I’m kind of uncomfortable leaving my can out 24 hours unsealed. So if it hadn’t sealed by the time it’s warm, maybe several hours, I refrigerate and just keep it refrigerated.

No, usually from leaving in a canner too long. The heat can’t start to dissipate quickly enough. The same thing can happen from keeping jars covered too long on the canner (I leave a tea towel on a short time if there is a fan running to keep it from having thermal shock).
