I make cinnamon buns for breakfast on Thanksgiving and Christmas. If you want to make them a little bit healthier, you can use wholemeal cake flour and, instead of oil in the filling, use date paste. It adds a delicious caramel flavour and comes out sticky. It’s just perfect with the cinnamon and vanilla + a pinch of salt and raisins. Plus, you don’t have to add sugar. You can also save a little to coat the bottom of the pan for a little extra caramel. 😋 But I will def try the tofu in the dough.

These look great, and are so much more nutritious than the trad kind. Regarding denseness, bread flour likes moisture and physical manipulation to properly develop. I tend to do less yeast, and a long no-knead rise, like 10-16 hours, for perfect dough without fuss. But yours seems to have worked out, regardless. Thanks for posting!

Wow!Those Cinnamon Rolls look similar to the ones we had served in the elementary school cafeteria back in s.e. Utah! So good, covered in nothing but sugar and cinnamon and so fluffy GOOD! also if you want to lower the calories even more, opt for a sugar free sugar substitute. i love truvia's brown sugar, it has minimal calories. that would take off about 100 calories per bun if you used sugar-free alternatives.

Awesome recipe... next time try real cinnamon ie Ceylon cinnamon. The cinnamon sold in the US is typically not genuine cinnamon but Cassia which is a Chinese relative of the cinnamon and looks and tastes quite different. Ceylon cinema has a softer more rounded flavor profile and delightful natural sweetness while cassia is relatively harsh.

They health benefits are in CEYLON cinnamon. The typical cinnamon you can get in the store isn't ceylon.

I actually have both!! I use Ceylon when I make smoothies in the morning, but use regular store bought cinnamon for baking. I have read they both of health benefits but Ceylon is just a better quality more pure form of the healthy stuff. Im still new to the cinnamon train when it comes to health

I think you would have had more rise if the yeast was activated with a warm soak prior. The dough never moisturizes the yeast as well as a true soak.

Not completely true. I do think the dough could’ve used more water though. The rise may have been hindeeed by the diy proving box/toaster oven being too warm. Most people usually cap it around 85°F

my favorite part of your videos is when your wife tastes whatever weird health food you made, and she always seems to have this insincere praise for the food. always makes me laugh. like she tastes it and realizes it isnt that good, but then she try's to be enthusiastic and supportive and think of a reason it tastes edible. i think thats just how she is on camera and she actually likes most of the stuff, but its funny it seems like a cringe office scene

I love the inclusion of the protein powder and tofu! So many "high protein" bread recipes just go for VWG/wheat protein which is basically fancy carbs.

VWG has a very poor amino acid profile so while it contains lots of "protein" it lacks key essential amino acids that your body, particularly lysine, can't make on it's own, you need to get it from diet.
