600g chicken, cut into pieces
1/2 onion (minced)
1 garlic clove (minced)
whhole garlic cloves
1/3 cup soy sauce
1 tsp salt
freshly-cracked peppercorns
1 tbsp vinegar
2-3 bay leaves
1. Marinade chicken with the soy sauce for at least 30 minutes.
2. Sauté the minced garlic and onion, and whole garlic cloves, in about 2 tbsp oil over medium heat until fragrant.
3. Add the chicken and stir-fry over high heat for about 3 minutes, mixing frequently to evenly sear.
4. Add about 1 cup water and put in the bay leaves. Add about 1 tsp freshly ground black pepper, and about 1 tsp salt. Mix well and simmer over low-medium heat about 5 minutes. Set the chicken pieces aside on a baking glassware.
5. Bring the remaining sauce to a soft boil, then add about a tbsp of vinegar. Simmer for about 2 minutes, then transfer the sauce onto the baking glassware. Season with further ground black pepper.
6. Over-bake (or air-fry) on 180°C for about 20 minutes.
