Making Flavorful Seared Salmon
salmon
salt & pepper
1/2 cup butter (cubed)
cloves of garlic
2-3 tbsp olive oil
rosemary
1. Lightly crush the garlic cloves, leaving the skin on. This will help reduce the garlic's tendency to burn with high heat.
2. Pat-dry the salmon as dry as possible, especially the skin. Very low moisture helps make the skin crispy.
3. Season the salmon skin-side up with salt and pepper.
4. In a pan, heat about 3 tbsp olive oil at medium-to-high heat. Once oil is hot, place the salmon skin-side down, leaving a bit of a gap between each piece.
5. While the skin-side cooks, season the meat-side with salt and pepper. Add in the garlic, butter, and rosemary around the salmon.
6. Cook the salmon most of the way while pan-frying skin-side down for about 4-5 minutes, or until the skin has cooked enough that it no longer sticks on the pan. The skin should be browned and firm, indicating crispiness.
7. Turn over the salmon and lower the heat to low. Baste the salmon with the butter-oil mixture for another two minutes or until the rest of the salmon has been cooked. You may check the side of the salmon to see how cooked through it is.
8. Remove from the pan and let rest on a wire rack, skin-side up, for about 5 minutes.
9. Serve with a side of lemon wedges, the cooked garlic, over some mashed potatoes.
NOTE: While basting, tilt the pan to one end of the salmon pieces to baste, then tilt to the other to baste again, to better cook the whole surface when the salmon pieces are thicker at the middle. Because the skin-side is cooked and crispy, the meat-side may not have full contact with the pan on the thinner ends.
