Chef here. I'm not sure about american cinema popcorn, but for us aussies, the best way to get cinema flavoured popcorn is...and i shit you not...just the regular no-name popping corn kernals, and bog standard salted margarine. A flat layer of corn with enough margarine (when melted) to cover about 1/2 to 3/4 of the kernal, and cook uncovered on a medium heat (it should bubble like a freshly poured carbonated drink). That will do 1 really decent, or 2 good servings (depending on hunger) if you use an 18 or 20cm pot. It only takes 3 minutes or so, so just increase the pot diameter if you need to do more serves than that, but keep in mind that A=pi x r^2.

That's because raw margarine has no flavor. It's industrially manufactured from neutrally-flavored vegetable oils. Then they add "artificial butter flavor", which is.....diacetyl.

Because diacetyl was included only in a few poorly made vaping juices in the past. (diacetyl is banned for vape juices) And that was in small amounts. Cigarettes contain naturally a much higher amount of diacetyl than any of those juices did. And popcorn factory workers were exposed to way higher amounts than even cigarettes. This video honestly gives very little actual information on diacetyl.. It is for instance also found naturally in butter, coffee , beer etc. (not just added to margarine)

If you want movie theater popcorn that's less expensive, dangerous, and laborious to produce, you can buy the buttery oil and seasoning salt. Just go to a restaurant supply store (like Smart&Final on the west coast) and buy Flavacol popcorn salt and popping oil. The only problem you'll have is that the oils is sold in gallon jugs and the salt in half-gallon cartons. Probably get some friends to go in on it with you and realize that your getting a lifetime supply in one _pop._

For anyone wondering about the diacetyl in vape juices, the amount detected was negligible and not anywhere near enough to get "popcorn lung" as it takes an EXTREMELY high concentration to do so. Also your reminder that people hate flavored smoke but love showing off flavored alcohol as if teens dont get drunk off of mad dawg.

You might be able to prepare the compound by acyloin condensation using methyl- or ethyl acetate and sodium. This should give you an α-hydroxyketone intermediate upon hydrolysis and the diketone upon further oxidation. Starting from butanone, you might be able to reduce it to 2-butanol, dehydrate to 2-butene, dihydroxylate to 2,3-butanediol and finally oxidize the diol to diketone.

Acyloin condensation was actually the method that failed me before! The product smelled vaguely butter-like, but mostly burnt and unusable.

Very interesting video, I actually made diacetyl roughly 4 years ago using a completely different method. I used a subspecies of Lactococcus lactis to make diacetyl through fermentation of citric acid. The only problem is that it also creates varying other metabolic products such as acetaldehyde, acetoin, 2,3-butanediol and a lot of lactic acid. (Although the change from diacetyl to acetoin is reversible). I didn't do a taste test, but you could probably do it without any issues since no dangerous chemicals are needed for this and because this method is also used in cheese making.

I loved the taste of movie butter and used to ask them to put some in the middle of the popcorn and then in the top.. at some point tho I started getting sick every time I went to movies.. about an hour after I get to movies I would start getting sick to my stomach and would have to go to the bathroom to vomit. I quit eating popcorn and the sickness went away.. then I tried a few times with and without butter… not sure what the issue is but now I get violently sick if I get that fake movie butter on my popcorn. I still miss the taste though but it’s been 12 years since I figured this out. I guess it’s not to much an issue anymore since movies are t worth seeing in a theatre much anymore. Btw.. any idea what it is in movie butter that was making me sick?

I see you've found diacetyl. I made it years ago, with a made up procedure and plastic tubing distillation thingy. I used isopropyl nitrite as the nitrosating reagent, made from HiMedia sodium nitrite.

I am fairly amused by this whole thing because I first became aware of Diacetyl is one of the flavors produced by yeast in brewing. It is often (but not always) undesirable and one of the major reasons for keeping brewing temperatures from running too high.

If Diacetyl is harmful to the lungs if it's inhaled in unnaturally large amounts, is the primary agent responsible for making movie theater popcorn more "buttery", and movie theaters wreak of that "buttery" popcorn... Doesn't that mean that being near that popcorn all of the time is harmful to your lungs? I wonder what the rate of lung damage is in movie theater employees vs visitors...

The problem with popcorn lung isn't people vaping diacetyl, there are no real reports of popcorn lung in people who vape. It's only the factory workers who spray diacetyl on butter flavoured popcorn who suffer from popcorn lung, hence the name.

It's been a little while, hope you've had a great Christmas and a kick ass new year❤ now.. fun things: dimethylglioxime has a special place in precious metal refining, notable for palladium and platinum from aqua region (I believe using aqua regia, chloroplatinic and chloropalladic acids, that whole gambit).. and diacetyl... ah yes. Good stuff, literally. And I thought you were going to make tbhq as I quickly scanned through the article you showed in the opening. You've relit a flame for chemistry in my heart. Ice been watching a ton if gardening videos lately, not seeing too much good Chem videos, just drugs and more drugs and those DO make great videos, but these things you're doing now are things we ALL consume, and funnily enough diacetyl IS technically the same opener for the chemical name for heroin lol. The first thing I think of when i go to the theater is "WTF did pay so much to be here when I can be at home and get to press pause when I need to go to the bathroom?". That being said if you REALLY want that genuine movie theater popcorn you only have to make it the way they did when it was still good. You pop it in refined coconut oil. There was a big scare in the 80's about how the minute amount of saturated fat in it would give you heart attacks but oddly no mention of the significant amount of carbs which would give you diabetes...and then heart attacks, strokes, obesity, Alzheimer's, cavities, halitosis....

Ive figured out how to make the best "movie theater" style popcorn. You gotta use coconut oil for popping the corn and must be done on a stove. Also gotta use a popcorn salt its super fine and wont clump, trick is to add the salt into the oil right before adding the corn to pop. Then every single inch of popcorn is covered in salt. Then once popped i use real butter (salted) and add that to the allready pre salted corn. You have to use coconut oil and popcorn salt otherwise the taste wont be right. I hate the taste of fake butter so i have never used it even at the movies. Real butter is just so so superior

think it's just the US because of health concerns looks like a lot of people have poisoned themselves with it they don't want civilians getting, it in the UK i can buy a 5kg tub of pure sodium nitrite with ease online

I actually did a whole video about nitrites, but basically, it became a popular poison among su*cidal people...10X less potent than a true poison like cyanide, but still potent enough to be used. So naturally, companies like Amazon decided they want nothing to do with it.

I thought someone had figured out a way to go from sodium nitrite to (md)p2p or something closer to that lane. (Obviously I have no chemistry knowledge) I appreciate the information 👍

I have a friend who moved here from the US who gave me "buttered popcorn"... Yeah, I'mma gon say it out loud: You guys are weird! It doesn't taste the slightest bit like butter, and even if it did, it doesn't belong on popcorn. Just a neutral oil, like coconut oil, to pop them in and salt, thanks :P
