I like the technique used of blending the liquid ingredients first. Hummus is very tasty. A couple tablespoons ice water also helps to make it smooth.

Whenever my days have been crazy, I go to your videos. I find them so relaxing. I miss the days of the cottage cooking. That vintage kitchen was the best! I do love your store videos! Love Hummas. I like adding Capers into the blend. Then, as you have done, sprinkle some Capers on the top with olive oil to finish. This is a slight variation. Oh, and extra garlic. Hummas fan. Thank you. .

If you haven't tried dry chickpeas for this recipe, i think you would be surprised how much heartier the hummus comes out. Also I usually use my instantpot to make them and freeze some of the chickpeas for other recipes. It's a little more work but worth it. Adding the zest of the lemon really brings it up a level too. So exciting for a Thursday new Cavalcade of food and one featuring Ralph! I love learning your techniques for making hummus. I’ve been making it in my vintage Cuisinart for a few years, but did not know about processing the oil and tahini together first. I’ll definitely give that a try. I make mine from dried garbanzo beans cooked In a instant pot which takes roughly 40 minutes total. I believe the advantage of canned garbanzo beans is that they don’t have the skins on them, traditionally if you make it from dried beans, you have to remove the skins once cooked. I discovered stirring them in water vigorously with a wooden spoon will cause the skins to sluff off and float to the top and you just simply pour off the water refill and do it two more times and you can get rid of most of the skins, should you ever decide to make hummus from dried beans. A package of dried garbanzo beans cost two dollars and makes a lot of hummus!

I add smoked paprika to mine. Also, I have heard that some people will soak the canned chick peas in a bowl of cold water, to allow the skins to peel off, then rinse, then process them.

I have heard that if you add an ice cube or two near the end of mixing you will have the fluffy texture that some adore! I really love to eat hummus with carrot and celery sticks, sauteed crispy meatballs and garlic parsley butter naan. I love watching your films and seeing all your really cool stuff.
