Ji Hye Kim, chef and owner of Miss Kim in Ann Arbor, MI is making tteokboki, a chewy, crispy, spicy, and savory street snack that’s wildly popular in Korea. The star of Ji Hye’s recipe is Korean rice cakes, which she softens in water and then fries in a pan with pork belly and simmers in a sweet and spicy gochujang sauce. Paired with soft-boiled eggs and scallions, you’ll immediately understand why tteokboki is a hit on Ji Hye’s restaurant menu.

this is a version of oil tteokboki. oil tteokboki is not as common as “regular” tteokboki, but it’s still considered a street food. it can be found in some parts of korea. if it’s too spicy or sweet, you can always alter it. if you don’t want the egg in it or you want it cooked more or less, you can alter that too. not a big deal people.

Well, yes and no - it's a market food more than a street food (a distinction without difference, perhaps) but if people go to Korea and expect to find this, they're going to have a VERY hard time finding it because it's essentially sold in just one neighborhood, and even there, it's not even the most common kind of tteokpokki.

기름떡볶이다 ㅎㅎ 일반 떡볶이보다 좀 더 자극적이고 구운 다음 양념에 버무리기 때문에 겉은 바삭하고 쫄깃해서 맛있죠. 전 국물떡볶이를 더 좋아하긴 하지만요. ㅋㅋㅋ

My Korean mom would have said the same thing Miss Kim’s friends said. If you read the comments you’ll understand. This is a great recipe and Miss Kim (the restaurant) serves one of the freshest, most delicious foods around. I order this dish every time.

Well it does certainly look a lot different from the classic; but Korea itself right now has a huge trend with tteokbokki undergoing a massive fusion change. There's even what's called a 로제떡볶이; personally not a fan but it uses cream in the sauce. A lot of toppings get added to it too, including even ramen noodles (fun fact, this was actually invented by some highschool girl who brought ramen noodles to a tteokbokki stand in Sindang-dong; an area historically well known for the dish!) If anyone's interested, look up the history of tteokbokki, forgot the name of the guy who made a video of the history of tteokbokki with English subs... Edit: it's 이오IO.

That's why she soaked them beforehand, the sauce being cooked with it mostly helped it along the rest of the way. But traditionally, you do boil them and this is much thicker than regular ddeokbokki. This dish has lots of varieties and they're all good in their own way

In US maybe? Basic sauce rendered with bacon bits for a flavor hack. In korea, it will be just gochujang sauce with any "allium" plant of the choices. Oligosaccharides (common korean sugar syrup, but better than sugar) and soy sauce at the end. You're right, totally halal and vegetarian

Definitely not vegetarian normally, it's usually made with a base for the sauce made with usually fish, like sardines, or that pork if you want a slightly different flavour. Vegetarian broth doesn't give it that flavour it needs. At least with this though you could just keep the pork out at home if you want to make it yourself

I haven't seen street vender with meat like pork in it but usually it has seafood broth in it (cheap place will alter it will simple msg though). So it's not vegetarian but if you are ok with seafood then you are still in safer side. when in doubt, stay with mini kimbop with no meat in it. It's definitely vegetarian

It's not vegetarian because the stock used to make it has anchovies in it, but generally it's halal (depending on the presence of fish cakes and what's in the fish cakes themselves). This is not normal tteokpokki. This is like a chef's spin on a very specific, geographically confined version of tteokpokki called "oil tteokpokki" but none of the existing versions of that style include pork, either. Essentially, the pork is to be chef-y, not because it's normally part of the food.

@@gab.lab.martins It shouldn't be too hard to find them online, but really, they're not much of a home project (which is why historically they were mostly part of royal cuisine and holiday food). The other thing not mentioned in the video is that this style is usually made with mil ttoek (wheat cakes) rather than ssal tteok (rice cakes) ~ you can sub whichever one is easiest to find. The wheat version is usually more slender than the rice ones, which gives a better crispy texture. If you really want, you can look up recipes online ~ Babish Culinary Universe has an episode where they make the fat kind from rice flour.

Ever since the beginning of the Covid lock down, I started making my own Asian foods. I never knew how easy most of their recipes are. At the restaurants, they seem so complex. The pros of making your own is that you know exactly what is in it. The cons are that you don't get to sit and relax while someone else is cooking. Lol!

This is not anything like tteokpokki you'd get on the street in Korea ~ there's nothing "street style" about it. But importantly, this is essentially a variation of "oil tteokpokki" which is a really, really specific style that's essentially confined to one area of northern Seoul (specifically, the markets of the western half of Seochon). There should really be better acknowledgement of the stylistic influences and origins of the one being made here, as well as better explanations of how this differs from the standard tteokpokki actually served on the streets of Korea.

@@xMorumoto It's actually more specific than that, though - the version I'm referring to is different than the normal version you'd see at most street vendors. There is one specific area of Seoul that does a pan-fried version called gireum (oil) tteokpokki, which is a pretty clear antecedent of the style she's making, which again, is very different from the standard street style. To clarify, there is a common street style, which she does mention isn't quite the same as hers. What she does not mention is the style that emerged in the 70s around Okin-dong and Tongin and Geumjeonkyo Markets, which seems to be what hers is based on, where the tteok are pan fried with sauce rather than boiled/braised.
