What do you do in April when you run out of jam and want to live more and more self-sufficiently. But ..., still want a little jam through your yogurt with oatmeal every morning? Then you wonder if you can make jam from something that is already available in April and go google. Because fruit is not there yet. Well, there are plenty of recipes on the internet. Flower jam for example, like the beautiful simple recipe from plantleven.nl for dandelion jam. I started experimenting with it.

The Plantleven.nl recipe uses jelly sugar. I didn't have that in stock. Instead, I used regular sugar and added apple. Apple contains pectin, the substance in fruit that makes jam thicken. Dandelion flowers don't have pectin, so you have to add that separately.
I made the dandelion jam 2 times. I did not wash the picked flowers, because then you would wash out the pollen. I thought that was a waste. If a bee, fly or spider has secretly made a poo in a flower, it will be rendered harmless during the cooking of the jam.
First attempt:
Ingredients:
- Flower petals from 125 dandelions
- Approximately 700ml of water ( that turned out to be too much afterwards. Better is 500 ml.)
- Half a lemon
- 1 Tangerine
- 700 grams of sugar
- Approximately 3 quarters apple (finely grated)
I boiled the flower decoction with the sugar and grated apple for half an hour and then poured it into the jam jars. The final result tasted very good but was still too liquid for jam. Plantleven.nl gives the tip to put a drop of hot jam on a cold saucer. When the jam solidifies it is thick enough.
Second attempt:
Ingredients:
- Flower petals from 300 dandelions
- About 1 l water
- 1 lemon
- 2 Tangerines
- 1 kg of sugar
- 1 apple (finely grated)
I boiled the flower decoction with the sugar and grated apple for a good hour and then poured it into the jam jars. This produced nice thick jam.
The taste of dandelion jam is really good. You taste flowers, honey, bergamot and in the background a marmalade flavor of the lemon and tangerine.
